Passover Rolls I

Reviewed: Mar. 23, 2013
Made these for breakfast today; I just tweaked it a bit. Since I was trying to finish up the rest of my matzos and didn't have any matzo meal, I just ground up some matzos in a food processor until they were very fine, which I suppose is the same thing as matzo meal. I replaced milk for water, added some dried fruit (raisins & cranberries), and pumpkin pie spice for flavor. After 45 minutes, I took them out of the oven (I actually used my toaster oven) and brushed the top with a honey glaze, then put them back in the oven for 5 more minutes. The texture and density was pretty good. They were quite bland in flavor though, so i'll make a note to add more spice, and be more generous with the honey glaze if I ever decide to make these again.

Chef John's Scones

Reviewed: Dec. 24, 2012
This is a fantastic recipe. The only thing I did differently was substitute in yogurt instead of sour cream, used raw sugar, and put in my own toppings. I used cranberries, chocolate chips, and for some I mixed in green tea powder to give it such a flavor. They turned out wonderfully, and i'll definitely be making these again. :')

Chef John's Pumpkin Pancakes

Reviewed: Nov. 22, 2012
I love the taste of these; the pumpkin stands out and the warm spices compliment it very nicely. I should note that I just substituted all the spices listed for a teaspoon or so of pumpkin pie spice. I'll definitely make these again someday, but I think i'll only be adding 3/4 of a teaspoon of spices because it was a little overpowering. Either that, or i'll just add more pumpkin.
