I usually make hummus from scratch and just wing it....usually I get overzealous with the tahini and bitterness prevails. This recipe was great! Simple, tasty and a nice consistency.
Hummus is ridiculously overpriced in the natural food markets around here and half the time it is flavorless, or too much garlic and a terrible thick mass. To the reviewer that complained about the salt destroying the taste, try a more subtle sea salt, like Himalayan pink. It gives it a nice flavor. Table salt is good for nothing. I only use organic ingredients which even further ups the flavor. Organic lemon concentrate and tahini from a jar further speeds the process. 15 mins you say? More like 5 mins at most. Great snack. Only downfall is I ate too much and now I need to take a nap. Organic vegetables for dipping are a nice contrast to pita or other breads and if you want to go a little lighter. I used a cuisinart - slapped all the ingredients together - smooth sailing. To the poster of this recipe - many thanks - outstanding! Hemp seed oil drizzled over top is great too. cheers.
