About this Cook
I am a wife, mother of two girls (5 and 2), and a public defender. I am also an active member of my church and in my children's school - as well as getting involved in their ever-expanding list of activities!
My favorite things to cook
I love to cook things that are healthy, easy, and QUICK, but I don't want the results to seem thrown-together. I also love to cook more indulgent "homey" meals and desserts, just not for every meal!
My favorite family cooking traditions
My husband's side of our family (his parents and his sister's family) all live in town with us. We get together for family dinner every Sunday after church with us rotating homes (and cooking responsibilities) every week. I am also a member of a book club that I describe as "Supper Club with Books" since we rotate in homes with cooking responsibilities as well. Cooking for Thanksgiving - with every family member bringing a side dish to share - remains my favorite of them all!

Perfecting my husband's family pound cake recipe. Getting something on the table every night!
My cooking tragedies
Forgetting to use self-rising flour when making biscuits. The memorable time the dog ate a huge chunk out of the banana bread I was planning to serve for Book Club brunch.

Apple Raisin French Toast Strata
I made this for our church's Easter breakfast. It looked so yummy and had such good reviews that I didn't try it out first. It was a HUGE hit and I enjoyed making something new. We didn't get to eat it for about an hour after I took it out of the oven (it hung out in my Pyrex carrier), and I did not take extra maple syrup. It did not need it (probably because of the pie filling sweetening it up) but when I make it at home I will drizzle on more because you really can't have too much real maple syrup! Based on other reviews (and my being too tired to face peeling and dicing apples) I did substitute the can of apple pie filling for the diced apples. I also added a couple of handfuls of Craisins. I also heeded the advice to up the temp to 350 and baked for 50 minutes. I also used a few bags of beans to weigh it down as it soaked overnight. The strata puffs up A LOT, so be sure to use a large enough baking dish - not all 9x13 baking dishes are created equal. It will settle back down as it sits - after 5 minutes I was able to put the lid of my carrier on it with no problem. Thanks for such a wonderful recipe!

Easy Pumpkin Muffins
These were so easy and SO good. My five year old daughter kept asking for more. So easy that they will be my next go-to recipe for any occasion that requires me to bring baked goods! There have been several comments about how they look. Toy do have to smooth out the batter if you want them pretty, but if you leave them "rustic" you end up with yummy crunchy bits on top!
