Blue Cheese Burgers

I altered this- I used only a pound of lean ground beef, no chives or Tabasco, 1.5 tsps Worchestershire, 1 tsp dijon mustard, and 4 ounces blue cheese and lots of black pepper. I thought these were excellent, loved the flavor and very moist. My husband asked for less blue cheese next time, though. If you love blue cheese, go for it.

Vegetarian Stuffed Peppers

I wasn't sure what to do w/ the tofu, so I diced it and then added it to the sherry/soy sauce. I used batsmati rice instead of brown. I cut my green peps in half lengthwise and then simmered them for one minute/side before filling them. I added a touch of cinnamon and black pepper to the tomato sauce. The first day they were fine, not bad but nothing amazing. The second day, reheated, they were much better- I also mashed my rice with the sauce the second day. I think mixing the sauce w/ the rice before stuffing might help some? It's a good, filling, vegetarian meal that let me feel guilt free after Xmas dinner. I will make 'em again.

Roasted Vegetables

I used more sweet potato and squash and less yukon gold since we had another potato dish. I left out the onion, too. This was fine. Nothing spectacular, but certainly not bad.

Easy Key Lime Pie I

I first made this Fall of 2001 for my then boyfriend (now husband). He asks for it all the time, and so does my dad. If key limes are hard to find, I sub 1/4 cup lemon juice and 1/4 cup lime juice. We all just love this.

Cocktail Meatballs

I used corn flakes instead of bread crumbs, left out the onion, and just dropped 'em right into the simmering suace (which I doubled, to use all the chili & cranberry up). They were fab.

Catfish Cakes

These were really tasty. My husband and I love crab cakes, but good crab is hard to find in the midwest. I used corn flakes instead of crackers, and used only 1.25-1.5C. Also used a little more mustard (dijon)/mayo/old bay. Coated in corn flakes to fry- it was a quick and tasty dinner. Thanks!

Smothered Pork Chops

I have not a clue what browning sauce is, so I browned my chops first and then added the onion/garlic to the drippings. At the end I added salt, pepper, and some rosemary. This was excellent- gravy was great on mashed pot.

Lemon-Chicken Stir-Fry

The basic recipe is OK. I made rice my own way, but followed the chicken part. I doubled the sauce recipe (2C broth 2T cornstarch). After I added the broth and it thickened, it smelled like chicken w/ gravy. I tasted it and it was v. bland. I grated an additional lemon rind into the pot, then added some soy sauce (a few healthy shakes). After that, it was very good and worthy of 5 stars.

Amazing Butternut Squash

I used slightly less than 1 whole squash, 1/3C plain fat free yogurt, 1/2tsp brown sugar, and 1 egg, left out the onion, then put it in a pie dish. Even so, it was very shallow. I used 1/3C crushed corn flakes instead of crackers for the topping. I thought this was excellent. Next time I might double the whole thing- more squash, more yummy topping. One note- I used the shaved kind of parmesean instead of the powdery king, and some of it was hard and crunchy (not melty).

Creamy Au Gratin Potatoes

These potatoes were absolutely wonderful. I added 1/4 tsp. crushed garlic to the butter when making the white sauce, and only 1/2 a small onion cut into slices for the onion layer. The edges were very brown, though- next time I might try a lower temperature, or check more frequently for doneness. Still, this is my new favorite potato recipe. Thanks!

Pineapple Upside-Down Cake V

I made this for my husband's birthday, but I used the "yellow cake" recipe by julia instead of the boxed cake- no trans fat! This cake is very easy and pretty, and so tasty! My husband wants it for every birthday from now on.

Yellow Cake

I used this cake with pineapple upside down cake V instead of the box cake it calls for. I used 1.5 cups of sugar and 3/4 cup pineapple juice. I baked it in two 9in pans for about 30 minutes. It is VERY moist, sweet- very tasty. I made it for my husband's birthday and he liked it a lot.

Aunt Teen's Creamy Chocolate Fudge

I seem to have the opposite problem of everyone else; my fudge was very thick and not at all pourable. I snapped a wooden spoon in half trying to mix in the vanilla. I just "pressed" in into a pan; it tastes all right, but the consistency is not great. Even though it's easier not to check for the soft-ball stage, I think it makes for a better fudge if you do.

Chicken Tikka Masala

I got married in June to an Indian man and have been trying to expand my Indian recipes list. He absolutely loves this dish. I do use WAY less salt than what's listed, and I cut the cayenne in half (even my husband thought it was on the hot side). Even my in-laws enjoyed this!
