Black Bean and Salsa Soup

This is a great, simple recipe. I used chicken stock because that's what I had. I added more cumin, chili powder, garlic powder and cayenne. A little squeeze of lime to finish it off - and it was perfection! Great simple recipe you can build on.

Lo Mein Noodles

I thought this recipe was awesome! My husband was impressed too - using spaghetti made me a little skeptical, but honestly - it was so delicious! I didn't have low sodium soy sauce, so I used regular, and I didn't have onion and carrot - but I DID have fresh ginger - minced it up - added some fresh garlic - wow - so flavorful! Loved it!

Sweet Baby Carrots

I was looking for something to go with a pork tenderloin that I had just made - looked in my fridge - saw carrots - and thought - what the heck can I do with carrots? Found this gem of a recipe - holy cow - it was soo good! I didn't put quite as much brown sugar - but I will definitely be making these in the future for sure! YUM!

Chef John's Mushroom Gravy

I just made this gravy to go over a pork tenderloin. I am not even really a gravy person - but this gravy was soooooo good! I was sorry that I didn't make a huge pot of it! My husband loved it! I used white mushrooms and baby portabellas - wow - what a rich flavor!

Carrot Cake III

I just made this for my family - what a hit! This recipe made me look like a carrot cake hero! I pretty much did everything exactly, except I did add an extra tsp. of cinnamon (so 3 tsps.) and for the frosting I only put in 3 cups of powdered sugar instead of 4, and I still thought it was very sweet - this recipe is going in my saved "golden" recipes for sure. There's a reason why this cake is so popular - trust me - you can't lose!

Grandmother's Buttermilk Cornbread

Made this cornbread yesterday.....it wasn't as moist as I had hoped, put oven 5 degrees less than specified due to my oven being very hot - also, cornbread by nature isn't the most moist bread to begin with. Wasn't too sweet at all - was expecting it to be super sweet because of the comments - the sweetness was perfect. Would make this again!

Asian Style Country Ribs

We thought these ribs were AWESOME! Only had 1/4 C soy sauce, and powdered ginger -- cooked on high in croc for 8 hrs. -- refrigerated -- skimmed off fat -- broiled in oven until dark and charred (you know -- like they would be on the grill) and they are so yummy dipped in hoisen sauce! Can't imagine why anyone wouldn't love these ribs!

Awesome Slow Cooker Pot Roast

I can't imagine anyone not liking this recipe - so flavorful - so good. I generously sprinkled a 5 lb. bottom round roast with Montreal Steak Seasoning (that's my go to seasoning for most things) - browned all sides in a skillet, used red wine and beef stock to make up the 1 1/4 Cups of water (more flavor), and I used Hidden Valle Ranch seasoning packet instead of onion soup mix because that's the flavor that I like - whisked together - poured on top of roast - topped with sliced onion, turned on the crock pot low and slow - 8 hrs. - served with mashed potatoes and asparagus - a huge crowd pleaser! Making this for Easter tomorrow!

Chicken Pot Pie IX

This is a great recipe -- didn't haave celery seed, so used "Bells" Seasoning -- tastes like Thaanksgiving dinner! Used chicken stock to boil veggies, and didn't discaard -- used it with white wine too equal the aamoount of stoock in recipe - so delicious! This would be a great recipe to use for left over turkey after Thaanksgiving!

Buttermilk Pancakes II

I would have to say unfortunately that this pancake was very disappointing. Maybe i'm not used to buttermilk pancakes, as this is my first time making them - but there wasn't anything cakey about them. They resembled a mixture between a pancake and an omlet - very eggy. Not much flavor either - the super mouthwatering recipe on the back of a well known baking mix is much fluffier and tastier than this egg disc.

Tangy Slow Cooker Pork Roast

This is such a wonderful recipe. I only had boneless centercut pork chops - put them in the crock pot completely frozen (it warms it up slowly rather than on high heat which "siezes" the meat and makes it tough.), and the fat on the meat melts away and back into the crock which only makes the meat more tender. And I didn't have red wine vinegar - I only had balsamic vinegar - WOW and YUM. So flavorful - Cooked on high for 6 hours - rich deep brown color. Those were the only changes I made. I made this for lunch today after church, and we gobbled it ALL up, so I'm making my second batch right now for dinner. Put it over mashed potatoes and opened up some frozen corn - really delicious dinner - you will NOT be sorry you chose this recipe, for sure!

Easy Tomato Soup Spice Cake

I've never made tomato Soup cake before - it is the most delicious, moist, light tasty cake that my 82 yr. old mother thinks should win awards. She was going on and on about it. Great with Cream Cheese Frosting II.

Cream Cheese Frosting II

This frosting is so delicious - I added about 1/2 Cup less Confectioner's Sugar because that's all I had, and it is the most delicious cream cheese frosting I've ever had. Trust me, you WILL lick the beaters!

Boilermaker Tailgate Chili

This is by far THE best chili recipe I have ever come across. So flavorful - I used Chuck Roast for the meat - expensive, but worth it! This chili is best made in a croc-pot and left to cook on low for 8-10 hrs. I ALWAYS make this a day or two ahead of time to let the flavors mellow out - THE only chili I will ever be making! I would rate this a 10 star if I could.

Oatmeal Shortbread

I'm not a huge oatmeal cookie fan - but my husband is. I thought this cookie was fantastic. The best of both worlds: the healthful benefits of oatmeal, and the rich buttery taste of shortbread. Yum!

Cranberry Chutney II

Really spicey and good! Reminds me of the chutney at our favorite Indian Restaurant. I left out the tomatoes and the raisins, and it made a great crunchy alternative to regular old cranberry sauce.
