Tomatillo Salsa Verde

I love this salsa! I did blend everything first like one of the other reviewer suggested. No water needed when done this way! It was quick, easy, and came out delicious!

Spicy Garlic Lime Chicken

Great recipe! I added about 1/4 c. of chicken broth to deglaze the pan and fresh cilantro. My husband gave it rave reviews and wants me to add this recipe to the list of his favorites!

Slow Cooker Carnitas

I omitted the cinnamon like some of the other reviewers but followed the rest of the recipe. It came out great! I tried crisping a little of it in the oven after it was done but I thought it dried up the meat too much. My husband loved it and wants me to make it again!

The Real Mojito

Great mojito! I used diet seven up instead of club soda and 1 equal packet instead of the sugar. My husband loved it and said it tasted better than the $7 mojito he paid for at a restaurant the other day.

Bacon-y Bok Choy

Great flavor! Followed the recipe exactly except that I used regular bok choy cut up in pieces and it was very tasty! I enjoyed the heat from the red pepper flakes but for those who don't like their foods a little spicy they may want to add a little less red pepper flake then called for. Will make again!

Ono Butter Mochi

Delish! I did use 1 can coconut milk and the rest whole milk but followed the rest of the recipe! My daughter and I loved it! Even my husband liked it and he is not a mochi fan! I did not refrigerate it cause I was afraid it would get hard. It kept well but it did lose the crispiness of the topping by the next day. It didn't matter to me though...I still thought it was fabulous!

Best Big, Fat, Chewy Chocolate Chip Cookie

The BEST cookies ever! To be honest, I never made homemade chocolate chip cookies! I usually just buy the premade doughs and bake em up...its just faster and easier! But I decided to give this recipe a try and I am so glad I did! It didn't take long at all, they were a sinch to make, and they were wonderful!

Guacamole

This guacamole was really good! My kids and I loved this recipe just the way it was but my husband thought it had a bit too much lime. He said the lime flavor overpowered the guacamole for his taste. Maybe I'll go with just half a lime next time. But I will definitely make it again!

Lemony Garlic Shrimp with Pasta

My husband loved, loved, loved this recipe! I skipped the brining part cause I was short on time and added salt to taste at the end. I used fettucini but maybe I will try the angel hair next time. I also thickened the sauce a little with a cornstarch slurry. Very tasty!

French Breakfast Puffs

I made these the other day for my kids and they loved them! I did make them into mini muffins and added a 1/2 tsp of vanilla to the batter! Man, if I wasn't on a diet I'd probably eat them all up! I'm sure they'd probably taste great with blueberries mixed into the batter too!

Best Brownies

These turned out great! I doubled the recipe except for the eggs and salt. I kept the salt at 1/4 tsp and only added 1 additional egg (3 eggs total). I don't like frosted brownies so I left out the frosting. I've made these using butter and margarine. Using butter resulted in a more fudgelike brownie and with margarine it was more cakey. Both were delicious! It's just a matter of your brownie preference. I also used the microwave to melt the butter instead of stovetop. I mixed the melted butter, sugar, and vanilla. Combined dry ingredients then added them to butter mixture. Lastly, I added the lightly beaten eggs to the mixture. I baked it at 350 for 30 minutes in a glass 8x11 pan sprayed with butter cooking spray. Super easy and so good!

Authentic French Meringues

I'm not really clear on the consistency of the finished product after beating and adding the sugar but mine came out like marshmellow cream. I was still able to pipe them onto a cookie sheet and they held their form well. I baked at 250 for 90 min and they came out perfect after letting them cool in the oven with door slightly open. But boy were they sweet! They had that strong powdered sugar taste even though I had folded 1 tsp coconut extract into the batter and dusted them with cocoa powder prior to baking. I really couldn't even taste the coconut flavor over the powdered sugar taste. Maybe I will try it with less sugar next time.

Low Carb Flavored Meringue Cookies

This was my first attempt at meringue cookies and I must say it was a lot easier than I thought it would be. The only thing is that I thought the after taste was for some reason on the salty side. Maybe a little less salt next time! ***Update- I made these cookies again and this time left out the salt completely. It did not change the structure of the cookie and eliminated the salty after taste mentioned previously. There still is the artificial sweetener after taste present but I can get past that (especially when I'm craving something sweet and watching my carbs)!
