Chicken Pot Pie IX

This is GREAT comfort food! I didn't have a DEEP DISH pie plate, so I used the biggest round Pyrex dish, about 4" tall. I used store brand refrigerator pie crust; par-baked bottom crust (poke holes with fork) per directions on box. Per other suggestions, I used chicken stock to cook vegetables (16 oz. frozen & fresh broccoli and mushroom that needed to be used up - ended up with TOO MUCH filling so made chicken noodle soup out of the rest). Next time I will combine the condensed soup with meat/veg BEFORE putting in shell. Filling made a layer on side where crusts didn't meet. Top crust went up the sides of dish - crunchy & flaky :) Definitely needs foil on edges, and vents in top crust. Exactly what I was craving! Thanks Robbie.

Lemon Pepper Zucchini

I made this recipe exactly, using McCormick California Style Lemon Pepper seasoning. It came out with an overpowering sweet taste. I don't know if it was the seasoning, but I did not like the result. However, this is an easy zucchini trick and the lemon pepper could be replaced by any number of herbs and spices.

Cheesy Creamed Spinach

This was AWESOME! Boyfriend looked questioningly at me when I said we were having creamed spinach with our beer-can chicken. "Do you even know if I like creamed spinach?!? Well, I don't!!" Well, he DID. He raved that it was better than the dish at the fancy steak house. I accidentally forgot to add the parmesan cheese, but it was still fantastic. Thanks for the recipe.

Slow Cooker Pulled Pork

I used 2# pork tenderloin (wasn't dry at all, but a cheaper cut should work too). Before I put the meat in the slow cooker, I covered it on all sides with salt, pepper, garlic powder & chili powder. I used a 20 oz bottle of root-beer (it covered 3/4 of the meat, so I flipped the meat after 3hours). After 6 hours I drained the meat and it fell apart. I finished it off with Sweet Baby Rays Sweet & Spicy BBQ sauce. So good! I will be making this again.

Ginger Glazed Mahi Mahi

Powerful taste. I served over white rice with sauteed zucchini and squash. A very tasty dinner - next time I'll add the extra sauce to the vegetables.

Pineapple Upside-Down Cake VII

Followed the suggestions to drain pineapple juice into cake mix. Also added 1/2 of the smallest can of crushed pineapple to the mix. (Made the cake VERY moist, almost to the point of not done in the middle, but Mark called it "perfect".) I don't have cast iron, so I used the stoneware lasagna pan. Was nervous about flipping it out, but followed directions & it worked perfectly. YUM!
