Birds' Nests

I added the cup of marshmallows as suggested by another reviewer. They stuck together very well. I also scooped them by the spoonful into a muffin pan so they would hold their shape. I let them cool for 45 min. and popped them out gently with a fork. They taste great!

Chocolate Banana Cream Pie

Fantastic! I couldn't put my fork down. Be sure to keep stirring in the saucepan to keep everything from becoming lumpy. I didn't have to melt the chocolate chips either, the mixture was warm enough from being cooked I just tossed the chips in.

Beer Batter for Fish

The crust came out delicate and almost greaseless, which is nice since I am not a big fan of deep fried items. However my sweetie is, which is what provoked me to try this recipe. The only thing that didn't work. . . I ran out fish before I ran out of batter. However, I sliced up an onion and had onion rings. Fabulous! I couldn't stop eating them.

Caramel Pretzel Nut Popcorn

I was looking for something good to much on and this recipe fit the bill. I only had white sugar in the pantry so that is what I used. Be careful not to overcook, I burned the sugar in my first attempt, I had boiled it too long. In my second try I got the sugar to 230 degrees and removed it from the heat. I got a softer, chewier caramel that I like. Thanks for the recipe! I haven't stopped eating it yet!

Easy Polenta with Tomato Sauce

the polenta came out very nice, however the tomato sauce seemed a bit acidic to the delicate flavor of the polenta. I think next time I will omit the sauce and serve plain.

Broiled Tilapia Parmesan

Real Italian Calzones

I've been using this recipe for a few years now and the kids love it! When I roll out my dough I cut it into 8 squares, fill them and fold the dough over. Each kid has their own calzone. They are so very tasty.

Iced Mocha Fusion Shake

Wow, this was good! It seemed so simple I was skeptical! I used 6 ice cubes (that come out of the trays) since my refrigerator doesn't dispense ice. I used my personal dark cocoa mix as the stand in for the mocha mix. Very yummy and refreshing a hot day!

Lemon Ice-Box Cake II

I made this for my small wedding party. Everyone loved it. I love it because I could make it a full day ahead and take it to our destination. I used a yellow box cake and added a half box of lemon pudding to the cake. The other half box I put into the frosting that used the whipped topping. It looked beautiful. It reminded me of an old fashioned cake a grandmother would make.

Little Lamb Meatballs in a Spicy Eggplant Tomato Sauce

This recipe was a great way to use up the eggplant from my garden! I loved the method of browning the meatballs in the oven. They were browned like the would be in a pan but I didn't have to fuss with them. The only thing I changed was that I used beef hamburger instead of lamb. (It was what I had in the freezer.) It is a great recipe it will be using again.

Black Forest Oatmeal Cookies

I replaced half of the shortening with butter simply because I enjoy butter in my cookie recipes. I also replaced a 1/3 cup of flour with cocoa. It gave the cookies a more chocolatey flavor that I was looking for. I also used dried tart cherries. I like the flavor contrasts. The rest of the recipe I followed exactly. These were fabulous in flavor, crunch and chew and will definitely be making again! They also froze well.

Mini Chocolate Hazelnut Cheesecakes

I made this for father's day for my husband and he loved them. I used crushed oreos for the crust. I used the Nutella brand hazelnut spread since that is what I could find at my local store. I baked them twenty minutes and they came out very tasty! I will certainly be making these mini cheesecakes again!
