Little Lamb Meatballs in a Spicy Eggplant Tomato Sauce
This recipe was a great way to use up the eggplant from my garden! I loved the method of browning the meatballs in the oven. They were browned like the would be in a pan but I didn't have to fuss with them. The only thing I changed was that I used beef hamburger instead of lamb. (It was what I had in the freezer.) It is a great recipe it will be using again.

Lemon Ice-Box Cake II
I made this for my small wedding party. Everyone loved it. I love it because I could make it a full day ahead and take it to our destination. I used a yellow box cake and added a half box of lemon pudding to the cake. The other half box I put into the frosting that used the whipped topping. It looked beautiful. It reminded me of an old fashioned cake a grandmother would make.

Iced Mocha Fusion Shake
Wow, this was good! It seemed so simple I was skeptical! I used 6 ice cubes (that come out of the trays) since my refrigerator doesn't dispense ice. I used my personal dark cocoa mix as the stand in for the mocha mix. Very yummy and refreshing a hot day!
