About this Cook
I am a personal trainer and am always trying to find ways to make meals better for my clients. i.e. banana "protein" bread. I have had lots of "oops, that doesn't work" experiences, but yummy ones too! I enjoy cooking and making life taste good while incorporating a healthy twist on everything.
My favorite things to cook
I love to bake! I love the smell of fresh baked oatmeal cookies, banana bread, and blueberry muffins!
My favorite family cooking traditions
I come from a HUGE Italian-Irish family and food is our motto. "we know how to eat and we know how to drink!". As for traditions, the Italian side takes over for sure! One of my Nanna's favorite things to make, that has been passed down, is italian sausage with pasta. Mmmmm-mmmmm!
My cooking triumphs
The chocolate chip cookie - hands down! Anytime, anywhere! I know, I know, it is SIMPLE and EASY...but I LOVE the way they turn out when I make 'em. And every time I bake these for others - whether sending them in the mail or delivering personally - I always get rave reviews. So that's it, I'm sticking with the chocolate chip cookie as my "cooking triumph"!
My cooking tragedies
Oh, I have plenty to tell! My most recent would be the "healthy" brownies that I attempted to make my lovely soon-to-be husband. Needless to say, sometimes cutting sugar is a recipe for disaster (or rather a funky tasting brownie!).

Bran Flakes Muffins with Raisins
I altered this recipe by mixing in dried cranberries and nuts in with the batter. Instead of shortening, I used applesauce to make these muffins a little more healthier (i'm all about that). Also, I substituted 1/2 cup of whole wheat flour and 1/2 cup all purpose flour instead of a whole cup of all purpose flour. As suggested by other users, I decreased the salt to 1/4 tsp and added a tsp of vanilla. Also, I sprinkled some oats and cinnamon sugar on the tops of the muffins while they were baking to give them a little extra flavor and look. In the end, these bran muffins came out delicious and full of flavor!

Garlic Croutons
I don't really care for croutons much, but I decided to try this recipe because I had some left over homemade wheat bread...and my fiance' adores croutons! This recipe made some AMAZING croutons though, and I loved eating them!!! I used galic herb & italian seasoning instead of the minced garlic. The flavor was very real and alive...a mouth full of taste!

Award Winning Soft Chocolate Chip Cookies
Chocolate lovers - make it with chocolate pudding instead of vanilla and you will fall in love!!! I baked batches of vanilla and chocolate - both were very soft and full of flavor. The vanilla pudding gives the cookies a beautiful tan color, while the chocolate pudding reveals a double dosing of delicious chocolate flavoring. 5 stars Debbi!!! Thanks for the recipe!
