Fun for something different than tortilla based casserole. Very fast and made it just because I had the ingredients on hand. So glad to find the recipe--we loved it! (low carb eaters can leave off the bottom)

Jen's Fresh and Spicy Salsa

Braised Balsamic Chicken

My husband is on a diet and this fit the bill so I tried it. He really LOVES balsamic vinegar and buys good ones so I thought this would be great for him. He loved it and takes his lunch to work, so he loved it even more the next day. Thanks for an additional meal to add to the diet file. ;)

Pesto Chicken Florentine

We loved this!! I had a larger package of chicken breasts so after reading the many great reviews I thought I'd just double it. I followed another reviewer's advice to cut up the chicken because it's personal preference. I ended up with the recipe finally in a wok since I had so much spinach. (I did end up using 2 whole 10 oz bags of spinach). The spinach cooks down very quickly and both bags easily fit into the wok. The bad news is that TWO of us ate most of it for dinner. (My husband is eating the small container of leftovers now.) LOVE this so much and will be making little tweaks for 1/2 of the family to eat low carbs and trying it with different pastas. Thanks MINERFAMILY!

Slow Cooker Pulled Pork

Nothing much to add to other reviews, but I do use mostly tenderloin for this because it is done faster and has less fat to trim off. I usually double the recipe, do it for 4 hours on high, then drain the excess liquid and add the BBQ sauce and cook for awhile longer. We like Sweet Baby Ray's BBQ sauce. One of our latest favorites for just family or double for a larger crowd.

Oven-Roasted Asparagus

I just found this recipe yesterday and made it with 3 other allrecipes recipes last night. Very tasty and easy to make, even with other items cooking that needed attention. I did not use the garlic, but I think that would be delicious too. The parmesan was a great addition without being overpowering.

Absolute Best Mashed Potatoes

Loved these--made them last night and they came out delicious. I did not end up needing the instant flakes, although I have used them before as a backup. The heavy cream is soooooo perfect in these! Thank you Susiq2!

Amazing Pork Tenderloin in the Slow Cooker

I was nervous about the amount of saltiness from other reviews, but made recipe as written. Came out SOOOOOOO tender and delicious. I did not thicken the au jus because I served green bean casserole and mashed potatoes, so the au jus was a "lighter" addition than a thick gravy. We'll be loving this again soon! Simple but tasty recipe to serve to guests too.

Red Curry Flank Steak

THANK YOU CHEF JOHN!!! My husband (the good cook in our family) made this last night and we devoured it. Recipe says it feeds 4 but I know we love flank steak and THIS ONE was just superb. Very succulent and no single flavor overpowering at all. I ate only this and fresh garden tomatoes, and left the corn on the cob for leftovers. This is worth hunting down the ingredients--Chef John has done it again! 10 stars!!!

Pecan Oven-Fried Fryer

This is SO moist and flavorful!! I have also made it with real buttermilk instead of the evap milk, and found a baking mix with some cayenne heat that I've used. This is in the rotation at our house. I'll try to get a photo up--thanks much Mildred!!

Slow Cooker Cranberry Pork

I had a 2 pound roast on hand, but made exact amounts of sauce ONLY because I only had one can of cranberry sauce on hand. Everyone loved it and we sopped up everything in site with the sauce. I will definitely double or triple it next time. Great new keeper for some picky eaters!! Thanks!

Toffee Crunch Grahams

I have made these for awhile and have a couple of tips. If you stir the boiling sugar and butter for 2 minutes it thickens up and won't be separated when you pour it out. I use a nonstick saucepan and a wooden spoon for the stirring, and a nonstick cookie sheet. Very yummy and you can make them in under 30 minutes.

Easy Honey Mustard Mozzarella Chicken

I was in a hurry and had to make one change--Hormel real bacon bits from a jar instead of the whole pieces of raw bacon--just under one jar for 4 large breasts. Made it for company and everyone LOVED it. Very moist chicken and great blend of flavors. Thanks for a keeper!

Anytime Fruit Salad

I did not have orange gelatin so I made it with lime. Brought back fond memories of years ago. VERY easy, quick, and pretty comfort food. Can be dished up ahead of time and kept refrigerated to pull out at meal time.

Hamburger Skillet Supper

This was definitely a surprise! I had only used these ramen noodles sauteed with butter for the salad with coleslaw, green onions, etc, so I had never seen them in lots of liquid and how they expand. This was tasty and a nice new meal to use for a quick meal on the run. Thanks for sharing it!

Bermuda Spinach Salad

Made this for a crowd and everyone loved it. Good for taking to summer gatherings. Only downside is that it won't keep overnight--croutons turn mushy. The celery taste is very refreshing without being overpowering. Try it!
