Jalapeno Garlic Tilapia Pasta

This is the best tilapia recipe I have tried. I used half-and-half instead of cream, and I broke up the fish after it cooked so that it was evenly distributed when I stirred in the spinach, tomato and pasta. It has a nice kick to it. Definitely a keeper.

I made these for a church pitch-in and they were very popular. They held the heat in after baking, and looked beautiful. The dough was kind of sticky after rising. I used cooking spray on my table so I could manipulate the dough easily without having to add more flour.

Unbelievable Chicken

This was really good. Some have said they cut back on the olive oil. Olive oil is one of the good fats; it raises your HDL and is good for you.

Lentil and Sausage Soup

This was fabulous. I used a pound of sweet Italian turkey sausage, skipped the pasta and added some fresh cut up kale. Great as leftovers and it freezes well.

Baba Ghanoush

We enjoyed this, but thought it was a tad bland. We prefer something a little more zippy like Spiced Sweet Roasted Red Pepper Hummus. I made both for a dinner get-together. It is a nice option for those who do not prefer spicy food. With the leftovers, I mixed the two together and that was good, too.

I made this for company. It was simple and delicious. I added more garlic because we think you simply cannot use too much. I like the fact that it comes together quickly and cooks quickly.

Spiced Sweet Roasted Red Pepper Hummus

This is so easy and tasted fabulous. I had canned roasted pimiento peppers from our garden and used them in this recipe. Great with pita bread, pita chips or celery. Yum!

Cherry Pie II

First time making pie with the sour cherries from our trees. This is wonderful. Tasted great even a couple of days later. I did use 1/4 cup flour as recommended in other reviews. This is NOT a deep dish pie, so if you make it in a deep dish pie pan it looks skimpy. Also, I would recommend buying a cherry pitter if you don't have one as I am still looking at my stained fingers several days after pitting cherries with a paper clip :)

Roast Sticky Chicken-Rotisserie Style

This was very good. In addition to having a wonderful meal, I now have plenty of cooked chicken in the freezer for other recipes. Next time I will put the chicken in the bag before I rub the spice mix on it, and I will put some of the mix under the skin.

Pita Chips

After reading the other reviews, I made the following changes - used olive oil cooking spray, sprayed pita bread on both sides before I cut the triangles. I sprinkled the seasonings on the bread (both sides), and spritzed a little more olive oil spray. Then I cut and separated the triangles and baked as directed. Next time I will use garlic powder instead of garlic salt because the flavor stands on its own.

Layered Patchwork Soup Mix

I made this soup "as is" since I planned on giving it out as gifts and I wanted us to try it the way it was presented. It is a good soup, and makes a LOT. For us personally, next time I will doctor it up a bit, add more garlic, maybe some bouillon, etc. For leftovers we added smoked sausage. I picked it over the myriad of soup mixes because it could be given to my vegetarian friends, and because it was so simple. Look for red lentils if you can find them. It was pretty in the jar, and well received. I put the spices in a snack-sized ziplock bag and stuffed it in the top of the jar. It all fit very nicely. I also used brown rice instead of white rice. Just a personal preference.

Chicken In Basil Cream

Grilled Lemon Herb Pork Chops

I have made this twice now and would highly recommend it. I did not have enough marinade left over to boil and brush on the chops while we grilled them, but we love them just the same. They are also great as leftovers, by themselves or as a sandwich. Great flavor.

Chantal's New York Cheesecake

This cheesecake tastes fantastic. Mine cracked, but I chalk that up to my inexperience. I still give it five stars because everyone loved the flavor, and it tasted as good several days later as it did the first day we ate it. Of course, we gained five pounds that week. Definitely not something I can make and have around all the time.

Zesty Slow Cooker Chicken Barbecue

We all loved this. After reading other reviews and considering our preferences, I made the following alterations - added one chopped onion, 3 cloves of garlic (minced) and 1/2 cup chicken broth. I put it in the crock pot before I left for work in the morning, came home and shredded the chicken, added about 1/4 cup flour mixed with a little water to prevent lumps, and cooked it for about 1/2 hour more. We ate it with baked potatoes and my husband took leftovers and made a sandwich out of it the next day. Quick, easy, tasty, enjoyed by even the picky "I don't like chicken" eater in the family. And the ingredients are all something I have on hand. Great recipe.

Earthquake Cake II

Ohmygosh. This is so rich, so easy to make and so good. I used a Chocolate Fudge cake mix, melted the butter and softened the cream cheese. I still had to blop on the cream cheese mixture rather than pour it on, but the results were so yummy. I baked it for 40 minutes which was ample time in my oven. It is very gooey the first day. It tasted even better the second day.
