Shiitake Scallopine

Really like this recipe. Seems to make a lot more pasta than necessary, but no problem. Only other issue I have is that it calls for a lot of artichokes. I used two 6 oz. bottles the first time and used 1 6 oz. bottle the second time I made this recipe. I can't imagine using 4 cans. Other than those small problems, I love the taste, and my dad (who HATES mushrooms) ate it both times I made it. He's tough to please and I didn't expect him to touch anything with mushrooms. So, if it passes the dad test, it's a keeper recipe!

Southern-Style Pork Chops

My girlfriend got tired of all the ethnic dishes I'd been making and kept asking me to make 'country cooking'. So I found this last week and made it. I had some issues with cooking the pork chops because I could only cook two at a time, so I had to keep adding oil to the pan and still ended up with some real bad burnt pieces in the sauce. Other than that, these were awesome. We had enough for 3 meals and finished them off in two days. I made this with a great potato salad dish from the site and served them over rice. I had some issues with the sauce and went a little off track trying to eyeball the wine and cream, but it turned out pretty good. I'm thinking of making these again tonight and imagine I'll do a little better the second time around. Keeping this recipe for future use. EDIT - wanted to throw in that I had 7 pork chops and ended up using 2 bags of onion mix to really get it in there.

Southern Potato Salad

This is the best potato salad I've made in years. Maybe it has been too long since I've had home made potato salad, but it took me back. The best compliment I got was when my girlfriend said it tasted just like her grandmother's potato salad. I'm pretty new to cooking so got behind while I was trying to peel the potatoes/eggs and cook my main dish at the same time. Lesson learned, prep first and it'll be smooth sailing. Also, I think you have to use Duke's mayo. Everyone I've talked to from the South says that's what they use.

Oven Fried Okra

This just didn't work for me. I usually like anything okra, but maybe I'm just too used to real fried okra to enjoy this. As I was eating it, I wished I had just heated up the frozen okra and eaten it plane. Wouldn't make this again.
