Bread Pudding II

I make this all the time, with whatever bread I happen to have leftover, and its always delicious. I took the other reviews into consideration and I always make it with half the sugar indicated. Sometimes I will replace the raisins with cinnamon, as I don't generally keep raisins on hand. I will make this recipe for myself and cut it down to 1/3 the original recipe, using about 5 - 6 slices of bread and a small shallow baking pan. This is a really great base recipe that is easy to tweak if you want, but delicious as is.

Garlic Cheddar Chicken

I cut the recipe in half to make dinner for 2 and it was very good. Served it with parmesan garlic noodles. Its a very tasty option for a busy night, and it requires only ingredients I always have on hand, which is a big plus for me. (I hate recipes that require I buy things that are only useful for one or two other recipes). This will definitely make its way into my weeknight meal rotation.

Easy Strawberry Lemonade

I make this all the time, and it always gets rave reviews. I always buy enough to make the pitcher 3 or 4 times over because once its gone people will be begging for more. I use about a cup of sliced frozen strawberries, mix the lemonade together with the strawberries, and let it sit in the fridge for at least 4 hours, usually more like 6. Then the strawberry really has time to mix with the lemonade, it turns this amazing pink color, and it tastes just like something you could get at a restaurant.

Focaccia Bread

To say I love this recipe is an understatement. Its probably my favorite recipe I have found on this site. It is very simple, easily adaptable to whatever seasonings you prefer/have on hand, and it requires no bread machine. Be forewarned though - once you make it, you will be getting requests for this bread from your family every few days!

Cinnamon Swirl Bread for the Bread Machine

So so delicious. If you don't have/like walnuts, double the cinnamon-sugar mixture to fill the bread. Delicious with coffee in the morning.

Rosemary Pull-Apart Dinner Rolls

Yum! I love Chef John recipes, and this one certainly doesn't disappoint. I made a chicken stew and needed an easy dinner roll recipe to go with it. You need to plan ahead for these since they take about 3 hours with all the waiting, but they are incredibly easy and really tasty. Don't change a thing in the recipe.

Ricotta Gnocchi

This is a delicious and very simple gnocchi recipe. I halved the recipe and used whole milk ricotta which I first drained. I put the ricotta in a thin layer on top of 3 coffee filters, laid the filters inside a colander, and let it drain for about 20 minutes. I didn't need any extra flour (perhaps because I strained the ricotta). I would make this again but next time I will probably make it as a side rather than a whole dinner, since it is a heavy meal.

Spicy Italian Pork Cutlets

I make this recipe quite often and I absolutely love it. I like spicy foods, so I use canned tomatoes with chiles, and I use a little more crushed red pepper. I also took another reviewer's advice and add a little butter towards the end to make the sauce smooth and rich. Served over garlic butter noodles, it makes a delicious and very filling dinner!

Ricotta Stuffed Zucchini

I used this filling recipe on eggplant rounds rather than zucchini halves and it was delicious. It was like a much lighter version of eggplant parmesan, perfect for a light dinner on a warm day. I had a little filling leftover (I was cooking for 1) and I scooped a dollop onto my ratatouille the next day - so good!

Frozen Chocolate Chip Cookie Dough Balls

Tomato-Rosemary Pan Sauce

I have made this sauce a number of times. I frequently use it on pork chops and serve over rice or buttered noodles. I also have put it over chicken and served with rice. Steak is actually my least favorite meat to serve it with, but that's just my personal taste. I have also made it with diced tomatoes with chiles in times when I wanted a spicier dinner, and that is also very good.

Nana's Apple Crisp

Two simple changes to take this recipe from good to great: 1. Use 1/2 cup brown sugar and 1/2 cup of white sugar. 2. Put 1 tbsp cinnamon directly onto the apples and 1 tbsp in with the oat mixture (i.e. skip the second tbsp on top of the oats). This is so easy to make and is a delicious treat. Enjoy it warm!

Chocopeanutbanana Smoothie

This was pretty tasty. I used almond milk, so I only used 1 tbsp of peanut butter because I was afraid it would be overly nutty. Next time I will try some other reviewers' suggestions to use frozen bananas. Its a nice way to indulge my chocolate cravings without going overboard.

Chef John's Chicken and Mushrooms

If the recipe had suggested chicken broth or white wine in place of the water, it would be 5 stars. I highly suggest making this substitution. I also tend to thicken the sauce slightly with cornstarch or flour to make it more like a gravy. Serve with mashed potatoes and a green veggie for a really great weeknight meal.

Chicken and Red Wine Sauce

I used 1 tablespoon of brown sugar with 1 cup of wine and that was plenty sweet. DO NOT use 1 cup. Otherwise this recipe is great. I added some crushed red pepper to the sauce to offset the sweetness and served over penne with a little garlic and butter. I made 4 small chicken breasts and had just enough sauce with the amount listed here as serving 12.

Amazing Strawberry Pound Cake

I made this pound cake last night and thought it was excellent. I'm not sure why some reviewers thought it was too sweet - I thought it was just the right amount of sweetness. I forgot to buy the almonds so I left that ingredient out and jut put in a little more strawberry, but I didn't feel like it was missing anything. Like the other reviewers said, there is no reason why you can't fit all this in one loaf pan. It took about 10 extra minutes for it to cook that way. Overall this recipe was very easy, and I would certainly make this again.

Butterscotch Berry Tart

I used strawberries, blueberries, and blackberries in this, and because I was making it for my dieting father, I cut the butterscotch in half and used a little more jam to make up for it. It was definitely plenty sweet, so I would probably continue to make it that way in the future. The crust didn't hold up well the next day - the sauce made it fairly soggy, so I suggest eating it within the first day.

Penne with Chicken and Asparagus

This dish is pretty good for a light supper. Adding mushrooms or broccoli helps to make it more interesting, but it needs more of a sauce to really add more flavor.
