Kelly's Black Bean Salad

This was a quick easy dish with high impact! I added a touch of habenaro sauce and some fresh basil, but really the recipe would be fine without changes!

Quinoa and Black Bean Chili

Holey Moley, this was fantastic! I made it per the recipe with only a few exceptions. Like many other reviewers, I cooked my quinoa in vegetable broth to give it more flavor. I added the juice of one lime after all other ingredients were simmering. Then I served it with sliced avocado and it was perfect. Rarely does my husband and 18yo son give me a two thumbs up for a vegan meal, but they did for this meal. I will be returning to this meal over and over again. I only wish I had found this recipe during football season!

Orange Vegan Cake

LOVED IT! I added the zest of the orange in addition to the juice from it. I also added 1t of pumpkin pie spice. Another reviewer mentioned making a glaze for this cake out of vegan butter, powdered sugar, orange zest, and walnuts. That put the recipe right over the top! I loved that this was easy and quick to make. We will definitely come back to this recipe!

Hallelujah Noodles

Wowsa! I made this for the first time tonight. It says it serves eight, but with a family of five, two of which are under 10yo, we had absolutely NO leftovers! Of course I made a few minor changes. I reduced the soy to 2/3 C, the oil to 1/4 C, and used a scant 1/2 C sugar. Even with these reductions in the sauce, I still had about 1/2 C of sauce left after all else was consumed. I am a vegan, so I opted to skip the crab meat. Instead I fried out a package of extra firm tofu in 1T of olive oil, 2t of garlic powder, and 2 chopped scallions. I had spinach on hand and it went perfectly with this meal. The avocado is the icing on the cake! It compliments the taste of the dressing in the perfect manner. I always ask my family if a meal is a do-over. This one was unanimous! My 7yo even asked if we could have it for breakfast tomorrow! :)

Maple Glazed Tofu

Wonderful! I had been in a cooking rut and this got me out of it! I used 2/3 c syrup, 2/3 c. orange juice, 1T dijon, 1.5t soy sauce for my sauce. I marinated the tofu(2 pkgs)in soy sauce for 30 mins, fried it out in 1T sesame oil, added 1 chopped yellow pepper, 1/2 C shredded carrot (for color), 1 lg can drained pineapple tidbits, and 6 chopped gr onions. It was still very sweet, as other reviewers have noted, but adding a titch of soy sauce at the table can easily overcome that! I served it with gelled cranberries. It was a hit with EVERYONE in the family and I have some picky eaters!

Kerry's Beany Salad

My family loved this recipe! I omitted the bulgar and doubled the rice, using brown vs white rice. I also omitted the corn, but used an additional (green) pepper. Next time I will make a bit more of the sauce (1.5x the called for ingredients) just because we loved it so much!

Awesome recipe!! I adjusted a few items to meet our family's taste. Instead of tomato sauce, I used canned tomatoes with green chilies to give it a little kick. I also added cheese tortellini instead of regular pasta. Additionally, I added 2 T fresh cilantro. It states that the red wine is optional, but I would not skip it! It adds such depth to the flavor!
