Chef John's Summer Scrambled Eggs

I have been making this for years, I use whatever cheese I have in the frig, but feta makes it special. It is also really good w/fresh oregano. Cherry tomatoes are excellent, but any chopped tomato works as long as it is fresh.

Lemon Cream Cheese Bars

Anything w/Pillsbury crescent rolls tastes like the crescent rolls. It dominates all the other flavors. For me, there is a strange aftertaste in them. I will stick w/the traditional lemon bar recipe.

Joseph's Best Easy Bacon Recipe

I have been baking my bacon for over a year now. It took me a few tries to get used to it. I was used to either microwaving it or frying it. I do spray the foil w/some cooking spray because for some reason even w/all the grease the bacon would stick and the foil would tear creating flipping issues. I do turn my bacon over half way through. 8 minutes each side. I have done both the pre-heated and not pre-heated method, and the not pre-heated works great. Saves on the electric bill and time! I like the way the bacon doesn't shrink and cooks to a perfect crispness and chewiness at the same time. I cook the whole pound, and then refrigerate the left overs for the next few days, just give it a 15 second zap in the microwave when I want it. It definitely to saves some time being able to cook the rest of the meal w/out having to constantly watch the bacon and have grease splatter everywhere from the frying pan on the stove top.

Vintage Lemonade

This is similar to the recipe we use. We don't do the boiling water etc. We use a gallon jar w/a screw lid, squeeze 6 lemons, add a cup of sugar, fill the jug w/ice to the top, and shake for about 20-30 minutes, or let it sit for an hour give or take. Then we fill the jug w/water and remove the rinds. Sometimes we add a wedge of lemon to the glass or just drink it as is.

Shrimp Goat Cheese Watermelon Salad Stack

I didn't have the time or energy to deal w/the rings and cutting, so I just made this into a salad by doing even sized cubes, and served on a bed of lettuce. Not as pretty or cool as having it stacked, but it sure tasted wonderful!

Classic Macaroni Salad

I am giving it 5 stars because this is the classic recipe for mac salad, but it has way too much sugar. I have been making this for so long I do the "pinch" method and add what is probably around two tablespoons or so. I just eyeball it. I want just enough sweetness to work w/the tart of the vinegar. I do love JqSmith's idea of making the dressing a day ahead of time for the flavors to meld and then adding it to the pasta the next day. From now on that is how I will do it.

Smooth Sweet Tea

I am a Southerner and have been making sweet tea all my life, and have never heard of adding a pinch of baking soda! What a difference it makes! Thank you. In the summer I add fresh mint leaves from my garden to the steeping tea bags. I add lemon when I add the cold water. It is divine. It does make a difference in how long you brew the tea bags, and it's best to not squeeze the bags before discarding. I always want to do that. And covering the tea while it steeps also helps make a better tea. I like Luzianne tea the best.

Grilled Vegetable Salad

I took this to a pot luck picnic. Fixed it as is, and as soon as it was done walked out the door to the picnic. It was great because it was a different side dish from the usual baked beans, pasta, and potato salads. I will make again since everyone enjoyed it and it is so easy to make.

Cheesecake Brownies

I have made this recipe before, for St. Patrick's Day, I added green food coloring to the cream cheese. I used a good quality dark chocolate brownie mix, and cooked them a tad longer, and I am glad I did otherwise they would have been undercooked. It's a delicious recipe!

Fruity Fun Skewers

In the actual recipe a honey lime dressing isn't included. I have had fruit skewers before and they are festive and pretty, I prefer to save time, effort, and make mine in a bowl w/the honey lime dressing which is included somewhere else on this site as a fruit salad recipe.

These are great. I eat them for breakfast, or grab-n-go. I have added chopped water chestnuts for crunch, as well as bacon and onion at times. It comes out like a quiche w/out the crust.

Circus Freaks

I wanted to offer up the suggestion when dipping w/chocolate if you add shavings of paraffin wax to your chocolate it will stick to whatever you are dipping and leave a nice shiny finish. It is something you have to eyeball, too much paraffin and your food item gets waxy, too little and it doesn't help accomplish what you are trying to achieve, which is why you add the shavings a little at a time.
