VELVEETA® Cheesy Baked Grits

Shrimp Goat Cheese Watermelon Salad Stack

I didn't have the time or energy to deal w/the rings and cutting, so I just made this into a salad by doing even sized cubes, and served on a bed of lettuce. Not as pretty or cool as having it stacked, but it sure tasted wonderful!

Classic Macaroni Salad

I am giving it 5 stars because this is the classic recipe for mac salad, but it has way too much sugar. I have been making this for so long I do the "pinch" method and add what is probably around two tablespoons or so. I just eyeball it. I want just enough sweetness to work w/the tart of the vinegar. I do love JqSmith's idea of making the dressing a day ahead of time for the flavors to meld and then adding it to the pasta the next day. From now on that is how I will do it.

Smooth Sweet Tea

I am a Southerner and have been making sweet tea all my life, and have never heard of adding a pinch of baking soda! What a difference it makes! Thank you. In the summer I add fresh mint leaves from my garden to the steeping tea bags. I add lemon when I add the cold water. It is divine. It does make a difference in how long you brew the tea bags, and it's best to not squeeze the bags before discarding. I always want to do that. And covering the tea while it steeps also helps make a better tea. I like Luzianne tea the best.

Grilled Vegetable Salad

I took this to a pot luck picnic. Fixed it as is, and as soon as it was done walked out the door to the picnic. It was great because it was a different side dish from the usual baked beans, pasta, and potato salads. I will make again since everyone enjoyed it and it is so easy to make.

Cheesecake Brownies

I have made this recipe before, for St. Patrick's Day, I added green food coloring to the cream cheese. I used a good quality dark chocolate brownie mix, and cooked them a tad longer, and I am glad I did otherwise they would have been undercooked. It's a delicious recipe!

Fruity Fun Skewers

In the actual recipe a honey lime dressing isn't included. I have had fruit skewers before and they are festive and pretty, I prefer to save time, effort, and make mine in a bowl w/the honey lime dressing which is included somewhere else on this site as a fruit salad recipe.

Spinach Brownies

These are great. I eat them for breakfast, or grab-n-go. I have added chopped water chestnuts for crunch, as well as bacon and onion at times. It comes out like a quiche w/out the crust.

Circus Freaks

I wanted to offer up the suggestion when dipping w/chocolate if you add shavings of paraffin wax to your chocolate it will stick to whatever you are dipping and leave a nice shiny finish. It is something you have to eyeball, too much paraffin and your food item gets waxy, too little and it doesn't help accomplish what you are trying to achieve, which is why you add the shavings a little at a time.

Crispy Rosemary Chicken and Fries

I gave this a four star even though it didn't turn out as described. I followed exactly, I did follow suggestions of cooking the potatoes for a half hour before adding chicken, and I did allow the chicken and potatoes to marinate, put fresh rosemary and oregano under the chicken skin, used coarse salt as someone suggested. I did throw in baby carrots and an onion just because I had some to use. I used a metal baking pan instead of a glass one. It didn't come out "crispy". I think my oven must be off. When I increased the heat it did get a little more crispy, but by then everything was done and borderline overcooked. I am going to try again, because I know this recipe has to work! This time I will increase the heat, and I am going to go buy a thermometer to see how off my oven settings are. I have noticed a few things that didn't seem to bake properly, so that is what I assume is the problem. Even though it didn't cook up as described it was still tasty, the onions caramelized beautifully, and I liked the carrots in the dish for color.

Slow Cooker Mac and Cheese

I have made this exact recipe given to me by a friend that swore it was to die for. I didn't like it, I prefer baked mac&c w/bread crumbs on top. I have used the cheddar cheese soup in a baked mac&c dish to try another version of it and it turned out ok, but I always go back to my standard recipe that I like. The thing is w/crock pots if I have to do any pre-cooking, or browning etc. to me that defeats the purpose of crock pot cooking. I like recipes where I put everything at once in the crock pot and just turn it on, that is what makes it easy. If I have to saute, brown, boil, items I may as well just use the stove and pots and pans.

Cuban Marinated Steak

Villy, the onion and garlic is in the Montreal seasoning mix and it has OJ in it, it doesn't need to be sour. I got almost this exact recipe from a Cuban. He used it on pork, which is the meat I have always used for this marinade, he added cilantro instead of oregano. He didn't use cumin seeds, he used the powdered. I had to beg the recipe out of him, and I am glad he shared it w/me because it is excellent on a pork roast shredded on a toasted bun. I am looking forward to trying it on steak, and trying it w/the seeds and oregano.
