Garbanzo Bean Chocolate Cake (Gluten Free!)

Just made this recipe after being very skeptical about baking with chickpeas! It turned out very delicious but a little bit dry! I made some adjustments to make it a bit "healthier"! I used organic honey in place of the refined sugar (1/2 cup and 2 tbsp) also I used only 1 cup of semisweet chocolate chips (plus 1/2 cup and 2 tbsp cocoa powder). For some added flavour I added a splash of vanilla and some instant coffee powder as well! It tastes very good and chocolatey! I will serve it up with a dollop of whip cream and some homemade raspberry sauce!

Bean Soup With Kale

Love this recipe! It is so healthy and yummy! Delicious! The only thing I changed was that I rinsed the beans and do not have a food processor so I mashed them up with a fork and it worked perfectly. Also, I let the soup simmer for an hour + so that all the flavours could blend together :)

Hungry Man's Hash Browns

made this for sunday brunch for the family and they were super simple and yummy! The only thing I did differently was add some pepper and cook them a bit longer to get them golden brown and crunchy on the outside!

Balsamic Chicken

I made this for a dinner party and everyone went for seconds! I marinated the chicken in the balsamic/broth mixture for a good 3 hours! I did not have any sugar on hand so I substituted maple syrup which gave the chicken a delicous sweetness. Instead of italian herb seasoning I used a dash of "herbes to province"! I added some chopped up mushrooms and onion to the marinade as well and cooked these with the chicken. I used the marinade for the sauce - boiling the marinade kills all the bacteria in my opinion. I served this over wild rice and sauteed green beans! A very "gourmet-looking" and seeminly easy dish!

Creme Fraiche Chicken

This recipe is simply delicieux! They say the way to every man's heart is through his stomach and this recipe did the trick! I made this for my boyfriend on Valentine's and he was very impressed! I did not bother adding the sour cream because the creme fraiche adds enough thickness and richness to the sauce in my opinion. I also added some "herbes de province" for some extra flavour and french kick! I used fresh pasta also :)
