Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

EXCELLENT! I've made this three times and each time they came out perfect. The only changes I made: I omitted the cayenne pepper from the chipotle mayo (already plenty spicy with great flavor) and added about 1/2 tsp dijon mustard to the honey/lime/cumin drizzle to act as a light emulsifier. Everyone who has tried these tacos has demanded the recipe! Thanks for sharing!

Chocolate Macaroon Tunnel Cake

I've been looking for the Pillsbury duplicate myself for years too! Anyone have an idea? I gave this three stars only because I haven't tried the recipe yet, but am searching for the Pillsbury-like coconut filled chocolate bundt cake recipe! :)

Authentic Huevos Rancheros

I see nothing authenic about this recipe. Scratch the beans, scratch the bacon - only use corn tortillas, eggs and fresh homemade salsa rojo(made from dried NM red chilis, water, salt and garlic). Maybe a little queso blanco on top...

Oatmeal Baked Chicken

I really enjoyed this recipe! I scaled it down to 2 servings for 2 chicken breasts and it was delicious. I did only use 1 tsp of the main spices because I knew any more than that may overwhelm the dish - it was perfect. I will definitely use this recipe again.

Pilgrim Pumpkin Pie

Spicy Bean Salsa

I really enjoyed this salsa because it's different. I omitted the black-eyed peas, and used an orange bell pepper, red and green onion, fresh roma tomatoes (seeded) and 4 roasted fresh jalapenos (rubbed with oil, salted and set under broiler - a few minutes, turning frequently until roasted). I also only used 1/2 cup Ken's italian dressing. Next time I will probably add more jalapenos - it was not spicy enough for me!

Broiled Tilapia Parmesan

Wow! This was absolutely delicious! I messed up and used 1/3 cup mayo instead of 3 tbs...BUT, it was just more similar to baked cod, and the sauce came out yummy and creamy. I did not use onion powder, and doubled the fresh squeezed lemon juice (love lemon with fish). I also lighly buttered, salted and peppered during the initial broiling. I cooked it 2 1/2 minutes on each side, and 4 minutes in the end. The fish was mouth-watering moist and the parmesian sauce was a beautiful light-golden bubbly brown. I would recommend the 1/3 mayo as I used, to create a creamy cheesy sauce (if you don't mind the calories)! Thanks for the recipe - everyone raved!
