Balsamic Chicken and Fresh Mozzarella

My husband and I really liked this recipe. I tweaked it a bit, though. I used boneless/skinless thighs instead of breasts (simply because I needed to use them.) They didn't take as long to cook, of course. I didn't have any fresh tomatoes on hand, so I used a whole drained can of Rotel. That added some nice zest to the recipe. I used a generous portion of shredded mozzarella (a 2 Cup bag) instead of sliced. I served it over pasta. It was really good, and I like the lightness of the meal.

Christmas Breakfast Sausage Casserole

My family enjoyed this when I cooked it for them on Christmas morning. I think I'll try hashbrowns next time instead of bread pieces.

Taco Soup II

This was so amazing! I browned the beef and the onions as instructed, but I let the soup simmer in the slow cooker for a few hours on low just for my own convenience. It was too delicious for my waistline!

Cajun Chicken Pasta

My husband loved this recipe! I had Ziti pasta on hand, so I substituted that for the linguine. It had amazing flavor, and my husband says that I have to make this a regular dish.

Four Square Green Beans

Strawberry Pie

This strawberry pie is so easy, and it tastes great! Instead of pouring gelatin over all the berries in one application, I alternated gelatin and berries so that there were no gaps in the pie at the bottom.
