Copycat Lawry's® Seasoned Salt

I stopped buying seasoned salt. Absolutely love this. I usually have all the ingredients on hand anyways, mix it up and put it in an old seasoned salt container and the family can't tell the difference!

Cha Cha's White Chicken Chili

We really enjoyed this. I did modify it a little for our preference. I omitted the can of jalapenos and subbed it instead with 2 cans of diced green chilies. Used only 2 cans of white beans and rotesseri chicken. Topped it with jack cheese, sour cream and cilantro.

Baked Kale Chips

I liked the texture, but the aftertaste, yuck! To me, it was almost like that canned spinach taste. We didn't get that aftertaste with the soup, so maybe it's the cooking method we don't like, which is of course no fault of the recipe itself.

Cuban Ropa Vieja

I've never had Cuban food before so I can't comment on authenticity or the proper way this dish should be served, but taste wise, this was fantastic! We did use a chuck roast instead of flank for personal preference and served it as suggested by the author of this recipe on tortillas, with jack cheese, sour cream and cilantro. It was a nice change from our usual tacos......even though I know this isn't supposed to be tacos. I did also salt & pepper the beef as I browned it, to me, that's just a given.

Spinach and Feta Pita Bake

Hot Buffalo Chicken, Bacon, and Cheese Sandwich

We've made this several times and love it! I do add an extra tablespoon of buffalo sauce and use cheddar on the kids half of the sandwich, we like the pepperjack on our half. This has also become our go to recipe when camping. Prepare it the night before and wrap it in two halves so it cooks more evenly. A hassle free meal after setting up the campsite. Thank you!!!

Black Bean Huevos Rancheros

Wonderful!!! I added a few good shakes of chili powder to the salsa, but otherwise didn't change a thing. My guy who doesn't care for black beans, asked that I make his with re-fried beans. Told him we were out and he just needed to eat it if he was hungry......two bites into it, he asked me to make him a second one! Really good and easy recipe.

Boudreaux's Zydeco Stomp Gumbo

We loved this! But, I did change a couple of things......yes, I'm one of those people! Instead of olive oil, I used a stick of butter and bacon drippings to make the roux. It took a good 40+ minutes of constantly stirring to get it that perfect dark brown color. Also, I simmered chicken thighs in the broth, bone-in, skin on & removed both upon serving. It just wouldn't be southern cooking without the fat! I only used 2 TBSP. of cajun seasoning as the type I have on hand is way too salty. For the sausage I used anduoille and didn't add the shrimp until the very end after it was taken off the burner, otherwise followed this recipe. It was a perfect blend of spiciness with smokiness. And of course, served it with rice which helped tone the heat down a little.

I cooked it at 350 for 5 minutes, used Rolo's & they turned out perfect! I probably should mention I made an entire cookie sheet full, as I knew 20 wouldn't be enough!

El Dorado Beef Casserole

This was really good, although I did change a couple of things. I used a can of diced tomatoes with chipotle chilies instead of tomato sauce & used cottage cheese instead of ricotta, just a personal preference for us. This could definitely be a dip. It wasn't the prettiest thing I've ever seen and certainly didn't look like the picture, but it tasted very good!

Alabama Pulled Pig

The flavor and tenderness of this is amazing! I also cheated because I do not have a smoker. After reading the reviews, the charcoal grill is something I would have never thought of....next time! I used a boneless 4 1/2 lbs pork butt & cooked in the oven tightly covered with foil at 275 for 6 hours. Removed the foil and cooked at 350 for an additional hour basting it a few times. Then allowed it to rest and then shredded it. I used less cayenne & about a tbs. of liquid smoke, it was still pretty spicy, but really good! I had to put BBQ sauce on the kids to counter the heat. This dish was amazing!

Green Chili Casserole

We had this last night for dinner & loved it! Followed the recipe, except I did not measure the cheese. I just grated a bunch and layered. There was only enough (mild) chilies for 2 layers, or I layered them too close together? I also had to let this cook for an additional 10 minutes, 40 minutes total. It set perfect, not messy or soggy at all. As others have claimed, if you don't LOVE green chilies, you may not care for this. Using the whole chilies, you did get some big bites of them. I paired this with a fruit salad and sourdough loaf with a garlic cheese spread. I will definitely make this again & may use the suggestions of other reviewers by adding sausage or a side of avocado and sour cream. YUMMY!

Easy Baked Cheese and Vegetable Twist

This was very easy to make and made a pretty presentation. You can add or omit ingredients based on your preferences. I added Italian sausage and a little cheddar cheese to make it a main course. It was very good. However, next time I think I will substitute the broccoli with zucchini or something else. Might also try adding a little garlic and pepper. It's a very versatile recipe that you can really make your own!

French Onion Soup Gratinee

I made this last night and it was really good! I lost my other french onion soup recipe that was more basic and used only beef stock. For whatever reason I could not get the onions to caramelize. Most likely, I was being impatient! It was still good. I used yellow onions and only 1 red. I used a good Zinfandel for the wine and a teaspoon of dried thyme since my store did not have fresh. Topped with a slice of Swiss and Gruyere. This paired nicely with a Caesar salad. I will make this again.

Pepperoncini Beef

Have made this a few times & we all love it! It's a nice change from the french dips I usually make. We top ours with the pepperoncini's, sliced tomatoes, provolone cheese & mustard. Have even substituted the chuck roast with a london broil that I had on hand. It worked well! Excellent, simple recipe!

Italian Sausage Soup

I made this last night and OH MY! This was delicious! I followed the recipe exact, except I used stock instead of broth and omitted the salt. My guy who does not like beans at all finished his bowl and had seconds! I am not a fan of cooked spinach, but will tolerate it every now and then. The ingredient portions for us were spot on as nothing overwhelmed. Great balanced flavor!

Chocolate Zucchini Bread II

As is, this recipe is just ok. It's a little dry and could use more chocolate. I made it again yesterday with a couple changes. I reduced the flour to 2 1/2 cups, added 1/2 cup cocoa and 1 cup of sour cream (1/2 c. for each loaf). Those changes made it super moist and chocolatey, 5 stars!

Easy Chicken and Dumplings

Excellent, easy and quick recipe! I had 2 large chicken breasts and some carrots from the garden that needed to be used. Wasn't sure how I was going to feed my family of 4 with 2 chicken breasts & came across this recipe! I did not have celery, so added diced potatoes and some frozen peas. Jen - you saved my night, thank you!
