Very good recipe that is simple and easy to follow. It was a tad too lemony and garlicky for my taste, so next time I would use a bigger eggplant (or even 2 eggplants) as some other reviewers have suggested.

Basic Cream Cheese Frosting

Very easy recipe. I only used 2 cups of confectioners sugar and I found it to be just right, possibly even a tad too sweet for my taste. Overall it is a very good recipe.

Pumpkin Cake III

Great recipe. I agree with the other reviewers that it calls for too much oil. I cut the oil down to 3/4c and added 1/4 cup of non fat yogurt and it came out great.

Antipasto Pasta Salad

Great recipe, however the flavor can get lost easily. If you add all of the ingredients except the balsamic before refridgerating, the flavor of the Italian dressing comes out a lot better. Then just add the balsamic just before serving.
