Easy Sugar Cookies

Just made this and it was everything promised. Easy, at 8 minutes they were soft and chewy. Sweet enough to be enjoyed by themselves, but not so sweet that icing wouldn't be delicious on them too. Loved it, and sugar cookies are my least favorite cookie.

Chicken Parmesan

Restaurant quality! Best chicken parmesan I've ever had, and really easy. I always worry about my chicken being dry and tough or not cooked all the way but they came out juicy and delicious. I made garlic pasta to go with it, and used the oil from frying the chicken to fry the garlic/mix with the pasta and it was seriously better than you can get at a restaurant. Thank you Chef John!

Chef John's Pumpkin Pancakes

I love this recipe! I hate pancakes, but these are amazing. The first time I tried them I followed the recipe exactly and they were wonderful. The second time I tried substituting pancake mix instead and it was still good, but following the recipe to a T is the best way to go. Definitely worth the time and effort!

Beef Tenderloin With Roasted Shallots

I had to make this more budget friendly since the beef tenderloin roast was going for over $16 a pound, so I tried this same recipe just with pork tenderloin which was only $6/lb. I made this for my husband and I, the gravy is amazing (and I saved half of it for the next time I make it). This is a great recipe, and if the pork tenderloin was that tender and soft and delicious I can't imagine how much beef tenderloin would blow your mind. Thanks for the recipe!
