Quiche Lorraine I

I had to make a vegetarian quiche lorraine for Easter. I made this with tofu bacon. The quiche was so good that the fake bacon didn't even matter. It took quite a long time to make, but it was well worth it and delicious. I will try again sometime with real bacon.

Creamy Chicken Stir-Fry

This was a good recipe, but I think we need to experiment a bit to make it better. The chicken was definitely a little bland when added in the direction of the recipe. We might try again with tofu or leftover roasted chicken.

Mom's Chocolate Chip Cookies

These were okay when they first came out of the oven. Left for a day at room temperature, they were also okay, but the ones I put in the fridge got rock hard. Even after leaving them out again for a bit, they remained almost too tough to eat. I would make again, but only right before they are to be eaten.

Baked Ziti III

This was really delicious, though I made some modifications. I used ground turkey (93% lean) and light sour cream. I also used an italian mix of shredded cheeses vs. purely provolone. I also took the advice of others and tossed the pasta in the sour cream before layering everything. It was great, and I would definitely make it again.

Blonde Brownies IV

These came out so soft for me that I had to put them in the fridge for the night to harden so I could cut them up. Also, there are way too many chocolate chips. It was almost unbearably sweet. Finally, at the end of the recipe, I just noticed it says to put pecans on the top, except pecans aren't mentioned in the ingredients. I may try this again, but will modify quite a bit.

This is a good simple method for sauteing broccoli rabe. I don't particularly like parm on mine, but the amount of garlic and olive oil is perfect.

Italian Turkey Meatballs

These were the best turkey meatballs I've ever made. I used the fresh oregano, rosemary, and parsley, and I think that made a big difference. I also cut down the crushed red pepper to 1/4 teaspoon which was perfectly spicy enough. I also have no idea what Melt is so I just sprayed the broiler pan with an olive oil Pam spray. I served simply over thin spaghetti with a light marinara sauce and a side of broccoli rabe. It was delicious!
