Day Before Mashed Potatoes

Although these potatoes had a good flavor, the texture was pretty unappealing to me. They came out of the fridge looking dry and cooking them only dried them out even more. I'll try again though since it is very convenient to have potatoes mashed and ready to go the day before you need them.

Cranberry-Pumpkin Cookies

These cookies were absolutely great, even my 2 year old devoured them! They were easy to make since I had leftover chopped cranberries from another recipe. Unlike some cookies, these aren't overly sweet or greasy. The texture is light and cakelike which makes them addictive. All I had was a mandarin orange, which squished and fell apart rather than letting me grate the rind so I substituted a little orange juice for the orange rind. I left out the nuts. Thanks for a great recipe, it is definitely a keeper!

Turkey Pot Pie I

This recipe is very forgiving. I had to omit the onions and celery (family preferences) and added in frozen peas. I put the filling in an extra deep pie pan and placed a 9 inch refrigerated pie crust on top. I'm sure that two crusts would have been twice as tasty, but I wanted to reduce the fat content. Everybody except my 2 year old liked it. Someone even asked for the recipe. Next time I will add more turkey, and sneak the onions back in. Thanks for a great way to use up that leftover turkey!

Cranberry Muffins

The spread for these is definitely tasty. I thought the muffins themselves were okay but not wonderful. Everyone else, including our 2 year old liked them so I went ahead and gave them 4 stars. I probably wouldn't make them again though, as they took considerably longer to make than most muffins. Chopping the cranberries in a food processor would speed things up a bit.

Cinnamon Rolls I

These were absolutely delicious when hot from the oven. I thought the amount of topping was perfect. I was really surprised at how easy it was to work with the dough. I didn't spread on the full amount of butter and added raisins before rolling it up. They were a little dry the second day, but most bread products are. I don't know if using the full amount of butter would have kept the bread more moist.

Colleen's Potato Crescent Rolls

Yum, yum, yum!!! I took one look at the shortening mixture and couldn't imagine what to do next. I poured everything into the Kitchen Aid and it mixed up nicely. Then I used a dough hook on my KitchenAid to knead the dough, so preparation was super simple. I did lower my oven temperature to 375 since the tops seemed to brown too fast.

Jay's Signature Pizza Crust

We have been using this crust recipe for the last few years. It is very versatile. Sometimes I add herbs or cheese and sometimes I brush the crust with olive oil. I always use 1 cup of whole wheat flour(the rest is white flour), decrease the water by 1/4 cup and let the bread machine do all of the work. We like crispy crust so I usually prebake the crust. I've also used the dough to make breadsticks with olive oil and spices. Even with all of the variations we have tried, it always turns out great.

Caramel Crispy Treats II

These were delicious even though I left out 2 tablespoons of the butter and didn't put on the topping. I just sprinkled the milk chocolate chips on top. My only complaint is that the bars seemed greasy even without the full amount of butter. The bars were still delicious and my family devoured them the first night. Thanks for an interesting variation of Rice Krispie treats.

Deep Dish Brownies

These are the best brownies I've ever made from scratch! My family loves chewy (not cake like) brownies so I followed the suggestion of using only 2 eggs and leaving out the baking powder. They were easy to make and soooo delicious. Thanks!

Polish Style Lasagna

This dish is perfect comfort food. I served it as the main dish at lunch and it was quite satisfying. The noodles make it more interesting than straight mashed potatoes and the sauteed onions add flavor. I reduced the butter by almost half, adding a little extra water and the potatoes were moist enough. My only complaint would be that the finished dish is very white and a little bland in appearance. It wouldn't be a very impressive dish to serve company without some type of garnish. Although I gave this recipe a 4 star rating, my husband said he would give it 5 stars for potential. He suggests adding peppers, chiles, sausage, cheddar cheese or anything else handy.

Carib Black Bean Soup

This soup is a crowd pleaser- and my two year old LOVED it! Even with extra cooking my beans didn't completely soften which was not a problem after I blended the entire batch. I completely prepared the soup a day early and then set it in a crock pot before we headed out to the pumpkin patch. When we returned a few hours later, the house smelled wonderful and the soup pleased everyone. It is so tasty that we will be having it again soon. Thanks! Update: It is Oct 23, 2008, five years (to the day) after my first review of this soup. We are having it tonight. It is truly a family favorite- a staple of our fall and winter meal plan. It is a great kid-pleaser. BTW, my beans didn't soften up tonight either!

Creamy Au Gratin Potatoes

My whole family, including the 2 year old, loved this dish! I made just a few additions to suit our preferences. I used Tillamook sharp cheddar cheese, put salt and pepper on each layer, and added a little garlic salt to the cheese sauce. I used 4 smallish russets and had plenty of sauce, but it definitely needed a 2 qt. casserole. About 15 minutes of baking without foil helped give the potatoes a finished look. They were great hot from the oven and also reheated the next morning. I will definitely be making this recipe again! Thanks!
