High Temperature Eye-of-Round Roast

This recipe was sensational for an eye of round roast. It didn't work that well with another roast I tried though. It still deserves 5 stars. I will most certainly use this recipe again.

Cream of Mushroom Soup III

I really loved this recipe, but my family didn't and they usually rave about everything I prepare. I think it was the sherry. I may make it again with Marsala wine, which has a nuttier favor. Perhaps, not so much wine either. Overall it is a good recipe.

Chicken Enchiladas II

This recipe was great, but I made a couple of changes. I used corn tortillas instead of flour (I don't care for flour tortillas.) I added cream of chicken and cream of mushroom soup. I also added some red oil hot sauce. It was yummy.

I followed the recipe exactly and they came out perfectly. However, I used aluminum foil on the pan the second time and it was much easier to remove them from the pan.

Chicken with Blueberry Sauce

We really liked this recipe. I used chicken thighs instead of breasts because that is what I had on hand. Instead of adding less vinegar I used about a tablespoon bit more, but used wine vinegar. I did this because I wanted more blueberries in the sauce. We didn't find it too tart at all and actually because of the extra blueberries I could have added more vinegar. We tend to like sweet tart foods. All in all it was very easy to make and I will most likely make it again.

Exquisite Pizza Sauce

We liked this recipe, but I decreased the honey to 1 tablespoon, good thing, because it was almost too sweet at that. Also increased the water to 1 Cup. I didn't have any anchovie paste, but I am sure that would have made it better. We like spicy so I increased the spices down the line with the exception of the peppers. All in all I will use this recipe again, but will use a little less honey about 2 tsp.

German Potato Pancakes

Wonderful recipe. I had some leftover mashed potatoes and added those into the mixture and it came out great. I served them with sour cream and chives. A big hit with the family.

Tuscan Cream Cheese Spread

We love this recipe, but I just can't resist making substitutions or addtions. I added a little pesto and a little less garlic as there is garlic in the pesto and it was just yummy. However, I am sure it is terrific just the way it is.

Mexican Cornbread II

We were not thrilled with this recipe. I took the advice of other reviewers and used whole kernel corn instead of creamed corn, but it was still too heavy for out tastes. Also added extra sugar which made it too sweet for out tastes. Perhaps the corn I added was too sweet to begin with. I don't think that I will make this recipe again, but will look for a similar one.

Sunday Gumbo

I am sure the recipe would have been great just the way it is written, but I never seem to have all the correct ingredients so I have to make substitutions. I didn't have red peppers so I used green peppers (small change there) I used tomatoes with chipotle peppers and less cayanne pepper. I also used andouille sausage instead of italian sausage. Plus I used regular white rice (a whole cup) instead of brown rice which I didn't have. I didn't have any frozen okra either, but had a can of canned okra so that worked out okay too. Anyhow, my whole family found this recipe really yummy and will make it again in the near future.

Asian Orange Chicken

The family really liked it and I will make again. I had to make several substitutions just so I didn't have to go to the store, but turned out really good anyhow. HAD TO CUT THE CORNSTARH IN HALF AND STILL WAS A LITTLE TOO MUCH. Overall really tasty.
