Four Cheese Macaroni and Cheese

This is a great recipe. Easy to make and remember (always key ... can't alwaysw get to all recipes for a forgotten recipe). I followed the suggestion of others and used a combined 1 cup of egg and milk. Also, I only had mixed shredded cheese, mozzarella and kraft cheese on hand so I used that. It came wonderfully cheesy. Will definitely make again.

Sam's Famous Carrot Cake

Came out great, took it to work and got good reviews. Added a bit of nutmeg, clove and allspice (1/4 tsp). Nice and moist cake. I also used the Cream Cheese Frosting II recipe from this site.

Old Bay® Grilled Lime Tuna Steak

Very good recipe! I didn't have cilantro so I substituted thyme; also I didn't grill it but cooked it in a heavy skillet (Blackened style) ... it was great!! Unlike most of the previouse reviewers, I prefer my salmon well done, so I think the longer marinate time would be good for me. Definitely a keeper and will make this again.

Shrimp Linguine

This is a great recipe ... a little bland though, needs a "kick". I may try the old bay suggestion from an earlier review. I didn't have any parsley at home, so I used a store bought "Italian Seasoning" mix in place of all the herbs. I started to do the 1/2 cup that is called for in the recipe (for parsley) but realized that was way too much so I ended up using maybe half of that or less (about 1/4 cup). Came out great, will make again ... will try the lower fat options though next time.

Barlow's Blackened Catfish

This was wonderful!! I was so proud of myself in the way it came out, it looked really professional, and tasted great. I actually already had a cajun seasoning prepared (from the Blakened Salmon recipe on this site) which I used instead ... however the added kick of baking it in Italian dressing is what really set it off. It was nice and moist and tangy. I loved it.

Hearty Vegetable Lasagna

Great recipe. I only altered the instructions in the veggies I used ... substituting a bag of whole spinach leaves for half of the mushrooms, one onion, half a green pepper and half a red pepper. Came out very moist, and held it's structure well. My non-vegetarian boyfriend loved it! Definitely a keeper.

Ginger Salmon

I had such high hopes for this recipe, but I didn't really enjoy this at all. I ended up only eating half my serving, and scraping the glaze off most of the portion that I did eat. But to be fair I think it might have been the Dijon mustard I used (it was a little old). I'll get some new mustard (maybe the horseradish the some others recommended) and try again.

Blackened Salmon Fillets

Great recipe, came out really nicely. Very smokey like everyone has said and is missing a little kick. I might try playing around with the spices a little ... maybe a little more pepper ... but definitely a keeper!!

Mandarin Shrimp and Vegetable Stir Fry

I was a little apprhensive at first, but it actually turned out pretty good. Tasted almost like I had ordered in! I would definitely make it again. It took a while to make though ... mainly preparing all the ingredients ... but worth it.

Simple Spinach Lasagna

This came out for well for me after making a few alterations that others have mentioned below. I used ricotta instead of cottage cheese; I only used 1 package of spinach; I added a jar of sliced mushrooms with onions sauteed; and I used no boil lasagna. Great for lunch and dinner. A definite keeper!
