Tex Mex Pork Roast

Reviewed: Jun. 16, 2014
Love this recipe and have made it several times. Easy peasy! Served it with salt and pepper hamburger buns, french fries, and coleslaw. Or just put it over a chopped salad mix with tomatoes, cucumbers, and avocado. Don't even need dressing for this.

New Orleans Corn Bisque with Smoked Sausage

Reviewed: Nov. 10, 2010
This was very good. My husband who is a meat and potatoes guy really enjoyed it as well. I did go with some of the other reviews and browned the sausage, then cooked the onions and used less fat. I also added shrimp and creole seasoning to taste. Yummy-thanks for sharing.

Chicken Enchiladas I

Reviewed: Apr. 13, 2009
This is a great recipe for ideas. I used the base idea and just changed a few things based on the reviews. I sauteed the onion and garlic, then I added the chicken with enough Enchilada sauce to moisten everything. Added the spices and simmered for 20 minutes. Then I added the cheese and cooled for a bit added the sour cream and then rolled in tortillas. Added that to a dish with a bit of enchilada sauce on the bottom. Also, after all were rolled I put the rest of the enchilada sauce on the top with cheese on top of that and that was it. Did not use taco sauce or water. Great dish. Have made it twice and it is a big hit. Served with Spanish rice and refried beans. Enchiladas were topped with lettuce, sour cream and salsa. Yummy!!!

Aussie Chicken

Reviewed: Mar. 19, 2008
This recipe is wonderful. I did a few modifications as I did not have enough yellow mustard so I used Dijon and based on the other reviews I did not use as much seasoning salt. It is very good and I will definitely make it again. PS-I also did not use corn syrup and still had a lot of sauce left over.

Diane's Colcannon

Reviewed: Mar. 18, 2008
This was a good recipe in comparision to others that I have made. I did add a bit more bacon and minced garlic to the mixture. Served this for St. Patty's day. I brought leftovers the following day and the girls in the office loved it. Thanks for a great recipe

Japanese Chicken Wings

Reviewed: Oct. 24, 2007
These were very good. My husband actually thanked me for making them. I did cut the sugar in half and I did deep fry the wings in oil as opposed to butter. Very Very good. Definitely a keeper matter of fact, I made copies of the recipe and handed them out to my team at work.

Angel Hair Pasta with Shrimp and Basil

Reviewed: Oct. 19, 2007
I cooked this the other night and did use the recommendation of others and cut the tomatoes in half. I also used cooking sherry instead of the wine. I also used scallops along with the shrimp. Absolutely delish. This is so good, like something that most people would order out in a restuarant. Thanks so much for sharing this great recipe with us.

Chicken In Sour Cream

Reviewed: Oct. 4, 2007
I made this recipe last night and it turned out well. I did not quite have a full cup of sour cream so I used an additional can of cream of mushroom. I also omitted the salt and basically browned the chicken with paprika, poured the sauce mixture over it and added a pound of crimini mushrooms. Served over rice with steamed veggies. Yumm!!!

Breakfast Casserole II

I make this recipe every year for Christmas morning. It has become an expectation with my family. Sometimes I use bacon or ham and then I use either O'Brian potatoes or shredded hashbrowns. Thanks for a great recipe

Au Gratin Potatoes

Reviewed: May 9, 2007
I made this recipe the other night with a few modifications. I used cream of chicken soup because that is what I had. Instead of pouring the mixture on top I combined all the ingredients together and then added a little cheese in with the mixture. I also sauteed my onions for a few minutes before adding in. I also added black pepper, a little salt and a couple of drops of tabasco. I did attempt to speed up the cooking but as stated by another reviewer, it caused the dish to brown too much on the bottom. I will try again on 325. I also used light sour cream and a splash of fat free half and half. Yummy dish. I am making it again for a potluck on Friday.

I have also made this recipe many times and it is a winner. Just came back from Maui and have to say that this was better than what I ate over there. I will be sharing this dish at a potluck next week. Mahalo for the great recipe.

Basil Chicken and Pasta

Reviewed: Aug. 3, 2005
I made this last night and did make a few changes based on the other reviews. I did double the sauce, added more garlic, mushrooms, cayenne pepper, and a few drops of hot sauce. I also grilled my chicken on the grill for extra color. Very good. This one is a keeper.

Cola Pot Roast II

Reviewed: Oct. 22, 2003
This was an awesome recipe. I did not cook it as long as the recipe calls for. Basically 1 hr at 350 and then 2 hours at 225. The gravy turned out creamy and smooth. I did add onions to the carrots and celery. This recipe feed a family of 4 with leftovers for lunch the next day. Not sure where the servings came from but no way if feeds 16. This is a keeper, most definitely.
