Very delicious and easy to bake! Instead of boiling, I cooked my sweet potatoes in the oven without foil directly on the rack for about 25 minutes. Make sure to poke them with a fork. You can also microwave 1 potato at a time for about 7 minutes and then once they were cooked, I slide a fork prong under the skin long ways and cut it all the way down lengthwise and then pulled it off quite easily.
