About this Cook
In June 2010 I got laid off from my job, and as of now I am still unemployed. A sort of silver lining here is that I have a lot of free time on my hands, and I tend to devote a big portion of it to cooking.
My favorite things to cook
Chicken Thighs with Dill and Asparagus, Lasagna, Banana Bread, Snickerdoodles to name just a few.
My favorite family cooking traditions
My dad used to always put music on when he was cooking. I am more like him than I would like to admit, and I do put music on when I cook every now and then. It brings him back.

Asian Glazed Chicken Thighs
Made it twice, with bonelles and bone-in thighs. Both came out excellent! The bone-in thighs took longer to cook, about an hour, and I did omit the chili garlic sauce because both my mom and I don't like spicy food. Will definitely add this dish to our rotation. Thanks for the great recipe!

Baked Flounder with Panko and Parmesan
Good enough for a quick dinner. I skipped brushing filets with butter, sprinkled them with lemon pepper instead and added some dill weed to the breadcrumb mix instead of thyme. Mom said they could use a little more Parmesan, and I thought they had plenty as is. I did like the way panko crisped and browned giving the dish a nice crispy topping. Will probably make again.

Easy Swedish Meatball Sauce
I admit, I strayed from the original recipe so take this review for what it's worth. I subbed a can of turkey gravy I had in the fridge for the longest time ever for the beef broth, used half-and-half instead of heavy cream, omitted flour since the sauce was think enough already, and didn't include rosemary either. I also increased the soy sauce to 1/2 tablespoon and decreased pepper to only 1/4 teaspoon, and the sause was peppery enough! Oh, and I threw in about 2 tablespoons of sour cream. Served it with turkey meatballs... delicious! The sause tasted a lot like the one they sell at IKEA to go with their meatballs. I almost wanted to drink it, lol.
