Pumpkin Squares

Fantastic. I made the following changes to make it lower sugar and fat (and so lower calorie), and they still turned out moist and delicious. My nephews couldn't stop eating these! Replace: 1 cup oil with 1/2 cup apple sauce, 1/2 cup oil; 2 cups sugar with 1/2 cup agave syrup and 1/4 sugar (or all sugar if no agave); 4 eggs with 2 eggs and 2 egg whites. I also added 1 cup raisins to the dry ingredients before stirring in.

Easy Polenta with Tomato Sauce

Great recipe. I cooked the polenta in some chicken broth, and topped the whole thing with oven roasted veggies (Zucchini, eggplant and peppers) and it was absolutely delicious. Thanks for a great recipe!

Old-World Rye Bread

Good recipe. I omitted the caraway seeds, put in only 1/3 cup molasses, used a scant 1/2 cup olive oil instead of butter and used a half whole wheat/half white blend for the flour in addition to the Rye. Note that I only needed to add 1/2 cup of this whole wheat/white blend to finish the dough! I found this dough did not knead well in my kitchenaid but did well by hand.

Pan-Seared Duck Breast with Blueberry Sauce

Absolutely delicious! I used maple syrup instead of sugar, prepared the sauce well in advance and then marinated the duck breasts in the sauce for 30 minutes before cooking (I made a couple deep slices in each breast to help the sauce penetrate the meat). I served the duck simply with steamed fingerling potatoes - delicious!
