So, so good! This was one of the yummiest dinners I've ever made. I followed the suggestion to add some more spices but stuck with the cream (not coconut milk). I made sure to dice the potatoes nice and small (each piece about the same size as 2-3 peas), and they cooked in exactly 10 minutes. I used the whole 8-oz can of tomato sauce because I love tomatoes. And I cooked the green peppers separately--I hate them, but I wanted my husband to be able to add them into his serving. I'll definitely make this again.

Sam's Famous Carrot Cake

I am normally not a fan of carrot cake, but this one is delicious, and a very reliable recipe! I've made it as a layer cake and as cupcakes; it was great both ways. I omit the coconut, use currants instead of raisins, and chop the walnuts and carrots very fine in a food processor.
