Grilled Portobello Mushrooms

Reviewed: Nov. 1, 2003
Since I don't have a grill, I baked this in the oven at 350 for 15-20 minutes like the other reviewers suggested. It turned out great!

SMUCKER'S® Stuffed French Toast

Reviewed: Jan. 27, 2004
I made a lot of changes to this recipe based on what I had in my kitchen, but I think I still stuck to its original intentions, and it turned out wonderful. I used macadamia nuts instead of walnuts or pecans, two slices of white bread for each 2 inch slice of French bread, whipping cream, and Smucker's strawberry jam instead of apricot preserves and orange juice. I had no trouble keeping the slices of bread together because the cream cheese mixture was sticky. This turned out really delicious and really filling, and it took about 30 minutes to make. I will definitely make this again. Thanks!

Awesome Slow Cooker Pot Roast

Reviewed: Jan. 27, 2004
This was my first attempt at a slow cooker meal, and it turned out absolutely heavenly! I used 1 can of soup, 1/2 soup can of water, and 3 pounds of beef. I cut up the meat into 1-2 inch cubes and cooked it on Low for 8 hours. When I came back, I couldn't believe how incredible it tasted and how easy it was to make! I will definitely make this again and add some veggies next time! Thanks!

Barlow's Blackened Catfish

Reviewed: Jan. 27, 2004
Wow! This dish was incredible! I made it exactly as stated with the exception of drizzling on the salad dressing instead of using a whole cup. This was extremely spicy and extremely tasty. I had to scrape the mixture off the fish in order to eat it, but it was so good. I will definitely make this again with half the amount of pepper and salt as others have suggested. Thanks!

Turkey Empanadas Grande

Reviewed: Jan. 27, 2004
At first, we made this recipe as stated with the exception that we left out cilantro (we don't like cilantro). The meat turned out dry and tasteless, and we were very disappointed. However, we made some simple changes that miraculously turned it into a 5! All we did was add 1 1/2 tsp salt and 1/2 to 2/3 cup chicken broth to the cooking meat mixture, and that gave it the flavor, texture, and moisture that the mixture needed for the ingredients to truly shine. I would also suggest using deep dish pie crusts because there was a lot of meat. However, it all turned out great, and we will definitely make this dish again!

BBQ Pork for Sandwiches

Reviewed: Jan. 27, 2004
Wow, this was so easy, and it turned out fantastic! I never need to buy BBQ pork again! I used 4 lb of pork butt, trimmed the fat and bones, and cooked it for 5 hours on high. After shredding the meat, I took another reviewer's suggestion and put it back in the slow cooker with the KC Masterpiece BBQ sauce and 2 ladles of broth. Then I let it cook for 1 hour on low, and it was scrumptious! Thanks! I will definitely make this again.

Oven Fried Parmesan Chicken

Reviewed: Dec. 31, 2003
This recipe really saved me the day I had very limited supplies on hand, and most recipes called for stuff I didn't have. We used .8 lb of chicken breast, cut each breast in half to make them thin, and pounded the breasts. Then we made the batter as specified and baked for 40 minutes. It was really tender and juicy, and I would definitely make this again. However, next time I'm going to put melted cheese and pasta sauce on it to make it more like the Chicken Parmesan that I'm used to. Thanks for a great recipe!

Best Marinara Sauce Yet

This sauce is amazing! I could drink this stuff. The only change that we made was using 4 tsp of dried parsley instead of the fresh parsley. I will definitely make this again!

Paella

Reviewed: Nov. 13, 2003
I followed most of the suggestions for making the paella authentic, and it was turned out to be absolutely amazing. I used a tiny bit of saffron instead of oregano and tumeric, halved the amount of shrimp, used chorizo instead of Italian sausage, and peas instead of green peppers. I did not have white wine, but I'll use that next time as the reviewer suggested. I'll definitely be making this again! Thanks!

Wow! This was incredible! This is better than restaurant quality. I followed this recipe exactly except that I substituted balsamic vinegar for white wine vinegar. It was so tasty that I could drink this dressing. I will definitely be making this again. Thanks!

Chicken Marsala

Reviewed: Nov. 11, 2003
I don't usually like chicken marsala in the restaurant, but I decided to give this a try. Boy, was I glad that I did! This was really good. The chicken was so tender and juicy! I only added a little MSG to give a little twist to the flavor. I will definitely make this again.

Macadamia-Crusted Sea Bass with Mango Cream Sauce

Reviewed: Nov. 11, 2003
This recipe is amazing!! We only made a couple of changes. We used halibut instead of sea bass because the store did not have sea bass, and we put a tablespoon of butter in the baking tin under the fish. We also did not have time to let the macademia crusting brown because the fish was already at 145 F, and we did not want to overcook the fish. But it didn't matter. This turned out to be simply *awesome*. My husband and I ate all four servings! Thanks!

Flaky Crescent Mushroom Turnovers

Reviewed: Dec. 13, 2003
We used Pillsbury croissant mix, and the only change we made was that we added a little sugar to the filling to add another interesting dimension. This was absolutely to die for! I am going to make this again, and again, and again!

Stuffed Pork Chops III

Reviewed: Nov. 1, 2003
I could not find thick pork chops, so my husband and I sandwiched the filling between two thin pork chops instead. We skewered them together with toothpicks and put more filling on the outside of the "sandwich" because we had so much filling left over. We also used chicken broth instead of beef broth as some of the reviewers suggested. Then we cooked it as specified, and it was wonderful! Thank you!
