Baked Fried Eggplant

Wow! Just made it and boy am I happy. The egg (I used whites) and sour cream (I used reduced fat) mixture was thick and not easy to deal with but was worth it. If you're calorie counting the nutrition info listed here is not accurate. You don't come close to using all of the egg, sour cream or bread crumbs and the unused portion is impacting the stats.

Beer Lime Grilled Chicken

I was looking to make some low fat shredded chicken and used this to marinate boneless skinless chicken breasts. Since I was concerned about fat and calories I used Miller 64 and marinated for about 3 hours. It was super juicy and shredded beautifully. It wasn't overly flavorful so I wouldn't make this the star of the meal but I will make it again, maybe experimenting with different beers and pairing it with great sides. (I shredded the chicken and made chicken tacos with it, a small can of chopped green chilies, 2/3 cup water and a packet of taco seasoning. Really happy with the results.)

Chicken and Rice Casserole I

I tried making this a little healthier, using a single can of low fat soup, water rather than milk and fresh mushrooms. I used 3 breasts (which turned out to be 2 pounds, and could have gotten away with half that amount) and cut them into bite sized pieces. There was so much talk of undercooked rice in other reviews I started very early. I'm glad I did because it took no less than an hour. I cannot stress enough that if this happens to you to not turn the temperature up. Think about how rice cooks on the stove top. You'll only burn it. When the rice was fully cooked I added a bag of broccoli flowerettes and put it back in the oven, uncovered, with some Parmesan, bread crumbs and a little of the onion soup mix that I had reserved sprinkled over the top. This is classic 50's style comfort food. It's not gourmet or exciting but it's nice.
