No Knead Beer Bread

Most excellent and very simple. I followed the recipe to a T and used Shock Top Honeycrisp Apple Wheat. Makes a very aromatic and delicious loaf!

Absolute Mexican Cornbread

I've been making this cornbread for nearly a decade. I cut the butter down to 1/2 cup and instead of green chiles I use an entire can of Rotel diced tomatoes with green chiles, pressed through a strainer to drain as much liquid as possible. It never fails to impress!

Portuguese Soup

One of my absolute favorites! I'm originally from Hawaii but my paternal grandparents are Portuguese. Since I'm so far away from home this is my comfort food. I do what my grandmother does...add a little bit of "whatever". This time it's leftover Thanksgiving ham :-)

Marshmallow Fondant

I love this recipe! Since I am a firm believer in "work smarter, not harder" I made this completely with my KitchenAid. I added only 3 tablespoons of water directly to the marshmallows before microwaving to melt. Then I poured EVERYTHING in the KitchenAid and let it run until my fondant was ready! I was able to use it right out of the bowl. I highly recommend rolling it out on parchment paper...no mess, no stick!

Stuffed Mushrooms II

I did not care for these at all, although my boyfriend sort of liked them the next day. I used more cream cheese and less bread crumbs than the recipe called for, but it still seemed like it was all filler. I don't think I will be making these again.

Malasadas

Onolicious is the perfect word! I used to go to Tex Drive-In all the time for their malasadas, but I've been in Virginia for about 4 years now. Mahalo for sharing this recipe! It brought back memories from the hanabata days in Hilo.
