Creamy Cinnamon Rice Pudding

Reviewed: Apr. 22, 2013
I have to believe that there is an error it the ingredients list somewhere. If you use 3 quarts of milk with one cup of rice there is just no way that this pudding will set. I did try it exactly as written. Even after reading other comments, I just could not get this recipe to work. I thought maybe the recipe meant 3 CUPS of milk instead of 3 QUARTS; but then that still did not sound right, because it calls for 2 cups of sugar which would make it awfully sweet. I have finally given up on this one; which is really too bad, as I wanted to like it.

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Apr. 22, 2013
I tried something different with this recipe and wow was it a hit..! I happened to come on about ten sets of chicken drumsticks and thighs and did not know quite what I was going to do with them. I had been saving this recipe and thought why not try this in the slow cooker with all these chicken pieces. I prepared all the pieces just as instructed for the original whole chicken recipe, and made quite a bit of extra sauce. I cooked the chicken pieces for about 7 to 7 1/2 hours, by which time the meat was falling off the bone. Then I shredded all that chicken meat and saved it for chicken tacos, or fajitas or to put over rice. I have several bags in my freezer to use as needed. The flavor is absolutely magnificent. My husband and I just love it. It was a bit difficult to pick the chicken out of all those bones, but it was so tender that it did not really take very long. I will definitely use this recipe on a whole chicken as written originally, and will also use this sauce on other items as well. It sounds as if it would work well on pork too. Thanks so much to Kathy for sharing it.

Slow Cooker Chili II

Reviewed: Apr. 22, 2013
This is an excellent recipe just as written. I did make some changes to suit our tastes, but did not need to for the sake of the recipe. I just wanted to make a double batch, so I added some ground sausage instead of extra ground beef and added a few different types of beans instead of just doubling the beans called for in the recipe. I used kidney, pinto, black and boracho beans and I used 5 cans of beans and a can of stewed tomatoes. I added the tomatoes towards the end, as I found that I had drained too much liquid from the beans and just needed a little more moisture. By the way, I did save the liquid from the beans and used it along the way to add back into the chili if needed. This is really a great recipe, and I have frozen a bunch of it to have for quick meals. This is a keeper.

Rum Raisin Bread Pudding with Rum Sauce

Reviewed: Apr. 6, 2013
Just tried this recipe for my husband who absolutely loves bread pudding. He also loves raisin bread, so how could I go wrong!! My instincts told me to follow some of the adjustments suggested by Glamadana, and she turned out to be correct. I used a whole loaf of bread and a can of evaporated milk to which I added a 1/2 cup of milk to make 2 cups total. And I also used the 3 eggs and 7 TBS butter she suggested. Unfortunately I forgot to double the sauce recipe, but will do so the next time. This could not have been any better. My husband just loves this bread pudding. It is definitely a keeper. The flavor and the texture is perfect, and the rum sauce is delightful and light. I will probably use it on some other things. If I changed anything I might add a tiny bit more rum to the main recipe, but it is not really important. The recipe works as is. Thanks Chicagocook22 for sharing this one.

Meat-Lover's Slow Cooker Spaghetti Sauce

Reviewed: Feb. 16, 2013
I'm with the recipe creator on this one! You don't add the sugar for sweetness. I've been making home made sauce (or gravy as they call it back in some neighborhoods in New York)for most of my life. You add the small amount of sugar late in the cooking process to cut the acidity of the tomato product. This is especially true when using canned tomatoes. I must say that although I had never tried it in a crock pot this is very similar to the recipe I use, and I will definitely be trying it this way from now on. I also agree with her later comments about using the sweet Italian sausage taken out of the casing and cut into chunks. Adding fresh mushrooms and peppers is a must for me as well. Great recipe and useful for many things besides spaghetti!!

Applesauce

Reviewed: Feb. 15, 2013
I just made this a little while ago, and it is definitely a keeper! My husband and I both tried it, and it was all we could do to wait until it cooled down. This is so easy to prepare, and also so adaptable to any change one might want to make. We will be using this one again and again. I'll bet it would work just great with pears. Also you could use a little brown sugar instead of white, or mix the two, as well as experimenting with other spices. Anyway, thank you Jackswife for this wonderful and simple recipe. I cannot believe I reached the ripe old age of 67 and never tried to make homemade applesauce!!!

Candied Carrots

Reviewed: Jan. 4, 2013
This could not be easier to fix! I have made these carrots three or four times since I downloaded the recipe just a week or two ago. My husband and I both love them. (And it is not always easy to get him to east his veggies...) Sometimes I add half teaspoon of cinammon and sometimes I just prepare them per the original directions. Very yummy! I think a little more heated spice might be good too. Will try it next time.
