Beefy Chinese Dumplings

Reviewed: Aug. 17, 2011
These were fantastic. I only used 1 lb of ground beef and used shredded cole slaw mix. The kids had a blast helping me make them too. I sauteed them in batches in a tiny bit of sesame seed oil after boiling. I can't wait to reheat my leftovers the same way, I'm sure they'll taste just as good.

Ethiopian Cabbage Dish

Reviewed: Apr. 7, 2011
A little bland but followed some reviews and added a splash of vinegar. I liked trying something new including cabbage.

Breaded Chicken Fingers

Reviewed: Jun. 9, 2010
So easy and good! I increased the breading 1.5x as suggested and double-dipped. Also increased seasonings and lightly salted after frying and putting on wire rack. My husband loved these and even drove home from work to eat the leftovers the next day - huge compliment from him!

Breakfast Pies

Reviewed: Mar. 22, 2010
I didn't have a chance to read the reviews before I made this so had to learn the hard way. I anticipated that the biscuits would puff up too much so I cut them in half and did my best to press into and up the sides of the muffin tin (regular size). Mine did overflow. I did use more egg than was called for though too. They tasted great and got rave reviews at work. Next time I make them (and I will) I really won't change anything except to put a cookie sheet below the muffin tin in the oven to catch the drippings (there really wasn't a lot of them). I'd also like to try with crescent dough. Definitely a customizable recipe.

Cheesy Potato Salad

Reviewed: Mar. 19, 2010
I thought this was yummy. I followed recipe but omitted the sugar and mixed the bacon and cheese and green onions in instead of putting on top.

Spanish Rice Bake

Reviewed: Mar. 19, 2010
I thought this was just ok. A little bland even though I doubled the spices and added 1/4 teaspoon chili sauce.

Baked Pork Chops I

Reviewed: Feb. 23, 2010
Very good! I fried them up good to try cutting down on the baking time. I used two REALLY large pork chops for same amount of sauce. Will make again.

Golden Sweet Cornbread

Reviewed: Feb. 23, 2010
I made into muffins. Very good! My husband was happy I finally made some cornbread that was the right amount of sweetness and not dry.

Cajun Chicken Lasagna

Reviewed: Feb. 17, 2010
A big hit at dinner! I made my own alfredo sauce per reviewers but it wasn't thick enough, didn't seem like enough for the filling and the butter separated out making the dish look really greasy when it came out of the oven. Next time I'll use the jarred stuff or I'll make with rotini pasta and not a lasagna. Also, I used smoked sausage instead of andouille. Will make again.

Ham Breakfast Braid

Reviewed: Feb. 17, 2010
I liked the idea of this and it was fine for a last minute dinner idea. But as other reviewers said it needed a lot more flavoring. I thought I added enough but I didn't. Probably won't make again.

Caramelized Baked Chicken

Reviewed: Feb. 8, 2010
We didn't love this. The sauce consistency was good, I added some cornstarch and boiled the sauce to thicken before pouring over the chicken. It was the flavor that we didn't love. I'm trying to find something that tastes like the Honey BBQ wings from KFC.

Grilled Sausage with Potatoes and Green Beans

Reviewed: Aug. 12, 2009
Great tasting and easy way to have some veggies (I also added frozen corn kernels midway through). To speed things up I partially cooked the cut up potatoes in the microwave first. Glad I listened to reviews and sauteed the sausage in Worchestershire sauce, it really was good and I never would have thought to do that. I doubled the recipe and put in a large rimmed baking sheet and cooked in the oven (grilled foil packets rarely turn out well for me). We were hungry and couldn't wait any longer so I turned the broiler on and it crisped the top up. Can't wait to make again.

Rhubarb Sour Cream Pie

Reviewed: Jul. 31, 2009
This was really good. I used frozen chopped rhubarb and it worked just fine, well maybe, the middle of the pie was soupy when I cut it and tried to serve. Next time I'll try cooking a little longer to see if this remedies this. I also used 1 cup sugar per other reviewers.

Mushroom Orzo

Reviewed: Jul. 30, 2009
Super easy recipe that will keep me from buying any of those box or envelope rice or pasta mixes at the store. And this one will be so much better for my family. I used 3/4 c chicken stock in place of water (would have used in place of entire cup but it was all I had). I also did not have a full cup of orzo (short about 1/8 cup) and that seemed to be just the right amount. I used double the amount of mushrooms and it wasn't too much. Next time I make I will double the recipe using 1 3/4 cup orzo to 2 cup broth and 1 cup white wine. I will also saute the mushrooms with the onions. Overall excellent and a keeper for me!

Chuck's Favorite Mac and Cheese

Reviewed: Jul. 30, 2009
This recipe was so easy. The flavor was good and a little tangy. I did add some milk per other reviews and found that the dish was a bit soupy, next time I'll skip it. I forgot the breadcrumbs and didn't miss them. Will make again.

Teriyaki Flank Steak

Reviewed: Jul. 28, 2009
Good flavor. I boiled and reserved the marinade to use as a sauce over this and rice. If you do this: be careful to only drizzle a little bit. I made the mistake of pouring almost all of the sauce over our 4 plates at dinner and you could have eaten it with a spoon! Drizzle a little and have the rest at the table for those who want more.

Slow Cooker Chicken Taco Soup

Reviewed: Jun. 12, 2009
Pretty good. I used the suggested homemade taco seasoning. But I felt this made the soup taste more like chili. I still liked it though. I put all ingredients in the crockpot before work and then shredded the chicken and stirred in after work and served almost immediately. Also, I used chicken broth instead of beer. Will make again.

Fettuccine Alfredo V

Reviewed: Jun. 3, 2009
Pretty good. It was creamy and the butter didn't separate out after it sat a few minutes. Next time I'll use 8 or 9 oz of pasta instead of 10 so it is a little more saucy. Served with grilled chicken on top. My toddler gobbled it up! Also, I ladled in some of the pasta boiled water into serving bowls to warm them up while I finished cooking so the pasta didn't cool off as fast.

Bob's Mexican Stuffed Chicken

Reviewed: Apr. 22, 2009
Delicious! 5 Stars even with my changes: use tortilla chips instead of cornflakes (I made half with cornflakes and half with tortilla chips.) Include 1-2 teaspoon of cream cheese on each. I put the extra filling on top of the chicken in the pan and even sprinkled some of the extra tortilla chips on top. I used more salsa too. I didn't use toothpicks, just cut chicken breasts in half lengthwise to make two cutlets and then pound thin just a little bit. Bread, fill, roll up, put in pan seam down. My husband liked with sour cream. Served with Spanish Rice Original.

Spanish Rice Original

Reviewed: Apr. 22, 2009
Very good. My only issue was that during my 30 min cook time, the rice mixture burnt on the bottom. Next time I will stir occasionally or add a little more chicken broth.
