Grandmother's Buttermilk Cornbread

Excellent cornbread! I didn't change a thing besides cooking it in a preheated cast iron skillet for 25 minutes.

Chicken Tortilla Soup V

This was awesome! I added one can of black beans, and used one 49 oz can of chicken stock. To garnish I added cilantro, sour cream, mexican cheese and avocado. Make this recipe!

Stuffed Cabbage Rolls

Good basic recipe. Using suggestions of others, I made changes, and I feel made the recipe even better. Used uncooked rice, sauteed the onion with some garlic, and added some of the tomatoes to the meat mixture. After stuffing the cabbage, I combined one can tomato soup and two cans crushed tomatoes for the sauce (tho I would use more tomato soup less crushed tomatoes next time). I placed this in a baking dish, covered and baked at 350 for 50 minutes. Delicious.

Lemon Chicken II

I like the idea of this recipe, but it didn't turn out for me. First, I changed the batter (cup of flour, one egg, enough cold water to make it runny) and that was good. I cut my chicken up before I battered it and fried it. I served it on spaghetti noodles that were tossed with a little sesame oil so they wouldn't stick. That was the good part of the meal...the sauce didn't taste good. I did not like the salty taste of the broth with the sweet taste of the sugar...and it never thickened for me. But again, I like the idea.

Amazing Italian Lemon Butter Chicken

Too lemony! Next time I will reduce the amount of lemon juice that I add to the sauce. Also, I did not use 2 sticks of butter like the recipe called for. I topped it off with paremsan cheese, which was a nice touch. I used canned mushrooms instead of fresh for convenience, and they were good. I might cut the artichokes up smaller next time (they were quartered).

Ginger Glazed Mahi Mahi

This was very good! I am always afraid to cook fish, because in my opinion, it never turns out well. But this time, I even finished my whole fillet! My glaze did not thicken, so next time I will cook it longer. I used the pan fry method. Thanks!

Dinah's Stuffed Mushrooms

Everyone said these tasted just like Olive Garden's (which is a huge compliment). I used crab instead of clams, but next time I might try a mixture of both. Everyone wants to borrow this recipe now!

Double Layer Pumpkin Cheesecake

I used ginger snaps to make the crust, and it turned out really well even though I've never made cheesecake before. I made this for Thanksgiving and everyone really enjoyed it. Definately a keeper. Oh, and I didn't change anything in this recipe besides the crust.

All American Apple Pie

This is the first pie I have ever made and everybody was really impressed. The topping wasn't crumbly, but I didn't feel like that was a problem. I think that the taste (sugar, cinnamon, nutmeg) is right on. And I really liked the crust. Although I did taste the flour on the apples, so I might change that next time. The only thing I did differently was I added extra cinnamon sugar to the top before I baked it. I used half macintosh apples and half fuji apples. I will bake it a little longer next time; I thought the apples could be softer.
