Slow-Cooked Tamale Casserole

This recipie is good, It has great flavor, I used taco seasoning instead of chili seasoning and added kidney beans, also used the frozen corn. Don't double the recipe unless you know you need a LOT!!

My Amish Friend's Caramel Corn

MMMMMMMmmmmmm.....this is so good!!! My son does not like sugary treats but he loved this!! Yes, it is a little work but well worth it. I measured out the popcorn into cups and thought, Wow, that's a lot of popcorn!! Then made the carmel coating as directed but felt the popcorn was not coated well enough, so I made a second batch of coating and poured it on at it's first 15 minute stirring....My husband agreed that it looked and tasted sooo much better, and yes we must sample as we go!! I had no problems with separating the popcorn, we had four pans in the oven at once, we would take out one dump it in a huge bowl, stir and dump it back on the pan and back in the oven, each time you stirred the popcorn it was less adherred to each other, when time was up it was already separated just needed spread on the counter, then try and not eat it....yeah right, yummy!!!

Chocolate Cornstarch Pudding

This was excellent!!! I am lactose intolerant so instead of milk I tried Almond Breeze and I doubled the Hershey's cocoa because so many reviews said it needed more. I microwaved mine in two minute increments, three times, using a wisk in between to mix the pudding, for a total of 6 minutes, then added the butter and vanilla!! With Almond Breeze it tasted a lot like a nutty candy bar chocolate. I then made a batch using So Delicious Dairy Free Coconut Milk. It seemed way too thin so I added another tablespoon of cornstarch, but whoa la at 6 minutes in the microwave it was very thick but after adding the butter and vanilla it was a very nice consistancy. Made with the Coconut milk it seemed more like the name brand cook and serve pudding!! Both work very well for those out there like me that are lactose intolerent!!!! Making it another choice for a great dessert or when you really need chocolate!!!
