Grilled Asparagus

Had company last night and it was raining hard, so i roasted them instead of grilling. Read reviews, and because I wanted to prep these along with other things I was making, I took the advice to marinate them til I was ready (about 3 hours), and added balsamic vinegar and garlic salt instead of regular - they were great and at 400 f they only took about 15 mins - the same time as my main halibut wellington.

Apple Snack Squares

Delicious - Had to make a couple changes, though. Only added 1 cup sugar and pecans instead. Added fresh ground nutmeg, and used chocolate chips instead, because that's what I had. Will definitely make again.

Baked Dijon Salmon

Very good - topping was delicious, and so was the mustard sauce. Only used 2 Tbsps mustard, but everything else the same. The salmon was moist and tasty.

French Onion Green Bean Casserole

Made it for my family today for Thanksgiving (Canadian) and everyone loved it, including my husband who informed me before that he didn't like green bean casseroles, and why was I trying something new when company is coming? He loved it!! Followed the recipe exactly (wow, that gruyere is expensive, but worth it) Love Chef John - Thank you.

Murgh Makhani (Indian Butter Chicken)

We loved it! Didn't buy enough thighs, so am making it a second meal by adding a chicken breast that I'll marinate the same way as the thighs, then add to the sauce I still have and Bingo meal two! Also didn't have heavy cream, so I used half coffee cream and 1% milk, and it worked like a charm. Definitely a keeper!

Apple Pie Muffins

This is definitely a 5 star recipe. I made it this afternoon and my husband and I love it. I read reviews where people said it stuck, but mine didn't - I greased the muffin pan really well and also around the tops, and that did the trick. Also, I had apples, topping and some batter left over, so I greased a bowl and put the apple slices and batter together and topped with the brown sugar mix. Worked out perfectly. Will make again! April 10 2013. Other people have now made this recipe - they asked me for it and every last one of them loves it.

Amazing Pork Tenderloin in the Slow Cooker

I put this in my slow cooker this am before I left for work at 7:30 am and we didn't eat dinner until 7:30 pm. I made some changes because of other reviews - I used a whole onion instead of onion soup mix and next time I would use only half. I did the rest just as the recipe said, and it turned out to be the most remarkable pulled pork - fork tender and great flavour. I added 2 tbsps corn starch mixed with water and poured the sauce into a pot, so I could bring it to a boil and thicken nicely. The gravy was amazing. My husband is not aj big fan of pork tenderloin and this he liked this a lot!

Corn Fritters

I made these last night and followed the recipe exactly. I've made many other versions of these fritters including with creamed corn, and these were by far the best. I think it's the sifting of the dry ingredients. My husband, who is not shy about critiquing my cooking agrees with me.

Pork Apple Burgers

We love these burgers! Followed the recipe exactly except I only had a lb of ground pork, so I halved the ingredients except for using a whole egg. Left them in the fridge over night, and they stayed together perfectly. Didn't have to add bread crumbs or anything else. Will make again and often.

Beef Medallions with Caramelized Pan Sauce

Yes, beef tenderloin is the same thing as fillet of beef. Am definitely going to make this recipe as soon as I have a hood over my stove - smoke alarm goes off with high heat searing! (or when it's not so cold outside that I can BBQ them)

Easy Broccoli Salad

Made this night before last, and it was great. Even the leftovers which I had last night were still firm and delicious. Next time, I think I'll add some crispy bacon and sprinkle of parmigiana cheese on top.

King Ranch Chicken Casserole

Loved this, and so did my husband. Ate it 2 nights running because there are just 2 of us. Froze the rest for later. Made a couple changes just because it was what I had. Added a pkg of quesadilla spices to use it up, and, of course, more cheese. That was it - delicious!

Onion Roasted Sweet Potatoes

Made it for another side last night for family Thanksgiving (Canadian) and they all loved it - nice change from the casserole I usually make. Added 1 quartered onion and a few strips of red bell pepper for colour and extra flavour. Had no trouble with anything burning because I had it in the oven on the top shelf above the turkey, so it was really long and slow, just stirred it all up once in a while.

Bacon Roasted Chicken

Made this last night with chicken legs, back attached - was what I had. Placed them (2) over a bed of carrots, celery and onions and spiced them with S+P, thyme and poultry seasonings. Pierced the skin in a lot of places and basted with veg oil instead of butter. Placed bacon strips all over to cover - baked them for an hour, took off the bacon and baked for another 45 mins, basting once. The bacon and the chicken were delicious! Will definitely make again.

Bourbon Sausage

I made this last night. Loved the flavour, but made a few changes based on other reviews. Less sugar, more cocktail sauce, and I ended up using more Southern Comfort than it called for because I made this early in the day, so kept adding more bourbon to thin it out. Also, couldn't find smokies or cocktail sausages, so I bought breakfast sausages and cut them in half - worked well, but my husband prefers the little guys.

Mozzarella Puffs

Made it for company last night. Everyone loved it - I read reviews first and cut the biscuits in half and added small piece of jalapeno peppers from a jar, and it worked really well with a little zing - think it would have been bland without.
