Flourless Peanut Butter Cookies

This is similar to the recipe on the back of the Kraft Peanut Butter jar. I made them last night and had to make another batch tonight. I am totally addicted. The Kraft recipe calls for only 1/2 cup sugar and to bake at 325 for 15 minutes. They are the most delectable cookie ever!

Super-Delicious Zuppa Toscana

This was soo good. I followed the recipe to a "T" and it turned out perfectly except that I did find it to be a tad too spicy. 1 1/4 tsp RP flake seemed a bit much but i thought it would be fine but yah, just a bit too spicy. But we like spice so all was well. I think 1/2 tsp RP flake would be more than plenty the next time around.

Applesauce

I used brown sugar instead of white. My tip is to begin by cooking just the apples and a small amount of the water. You can then add water as needed as the apples begin to break down--you will then have the perfect consistency. Once the apples have cooked down taste them to determine the correct amount of sugar and spice needed because all apples have a different level of sweetness. I also used my immersion blender because we prefer a smooth sauce. My kids and husband proclaim that this is the best apple sauce they have ever tasted!

Authentic Paella

This was my first attempt at Paella and it turned out wonderfully! I read somewhere that turmeric can be used in place of saffron--although not the same it is definitely less expensive BUT beware...a little goes a long way!

Easy Curried Cauliflower

Delicious...although I didn't add beans--the combo doesn't work for me. Just the perfect amount of spice (heat) for the hubby, kids and myself. My 8 yo just asked if he could have a bowl of the leftovers TO SNACK ON!! I can never get him to eat veggies, so a definite 5 star rating :)

Creamy Hot Cocoa

Not my favourtie, sorry. My hot cocoa consists of warming milk on the stove and whisking in Nesquik so I thouht this would be way better but even the kids agreed that our tried and true easy method is better! I didn't care for the bitter cocoa after taste.

Homemade Peanut Butter Cups

They were pretty close to the real deal. I took the advice of another and just put some chocolate in the bottom, then the ball of PB then some more chocolate over top. This worked perfectly. My only complaint is that the ratios were off to me. Next time I will do a little less PB mixture in each cup and more chocolate.

Serbian Ground Beef, Veggie, and Potato Bake

K, first of all, I didn't have cloves. Just feel like I need to mention that for all those people who freak if you don't follow the recipe to a "T" lol! I actually liked this even tho I was almost positive that the cinnamon would over power the dish. I also suspected the potatoes would be under-cooked after only 40 mins. Much to my amazement, the flavour was great and potatoes perfectly cooked. Oh, I uncovered for last 10 minutes and sprinkled with some cheese (!) Yes another change to the recipe... ha ha ha!

Creamy Potato Leek Soup II

Can't go wrong here! Super quick and easy. I though 1 pound of bacon was too much but it was the perfect amount. YUM, one of the best things that I've eaten in a while was a piping hot bowl of this stuff!!

I think they could do with a little more sweetness or chocolately flavour, also some salt. Other than that they are pretty good, moist and chewy. Kids couldn't believe they were homemade--thought I bought them somewhere!

Greek Style Potatoes

The lemon flavour was way too over-powering, and I lOVE lemon. Having said that, the cooking method is far superior to anything I've done before (cooking in water). The potatoes turn out nice and soft, just like in a Greek restaurant. Unfortunately for me, the lemon was just too strong and ruined the dish. I will definitely make this again but with maybe 1/8 of a cup or less of lemon juice!

Kelsey's Favorite Stuffed Green Peppers

I loved the addition of cheese. I popped them in the microwave for 5 mintues then cooked for about 20 minutes in the oven. I never know what to serve them with so I went with mashed potatoes as suggested. Made for a nice hearty meal on a cool November evening!
