Breakfast Pizza I

Reviewed: Dec. 27, 2013
I followed this recipe but I did them individually in a muffin pan... So good. I made half with pre-cooked crumbled sausage and half with pre-cooked diced ham.

Perfect as written, but able to add more oats if desired. This was exactly what I was craving!

Almond Buttercrunch Candy I

Reviewed: Nov. 16, 2013
I'm not very experienced at making candy so I was nervous going into this, but it was super easy! So simple, I can't believe how few ingredients makes something so good! Tastes every bit as good if not better than store bought almond roca. I used half real butter and half smart balance butter and it turned out beautifully. I also used a bit more whole almonds and will probably use even more almonds next time.

Chocolate Peanut Butter Bars III

Reviewed: Nov. 3, 2013
My husband called the gourmet peanut butter cups. I doubled the crust part, but next time I'll just do 1.5 I also increased the qty's for the chocolate layers too, but followed the peanut butter layer exactly. For the top layer I didn't have any shortening but I understood it was needed to help soften the chocolate, so I used a little canola oil cause that's what I had. I stirred it into the chocolate over a double boiler and it worked great! I'll use that trick again!

White Brownies

Reviewed: Nov. 3, 2013
I loved these! And I don't like blondies. These were quite sweet, and I liked that! After reading all the reviews I decided to up the liquid. The chocolate brownies I make use oil so I used the 1/3 cup milk and then added about 1/4 cup oil. I must have gotten lucky when spreading these out, I used a plastic spatula and maybe the oil helped, but I just got on a roll and was able to push and smoosh the batter down and filled a 9x13 pan perfectly. I baked about 10 min. longer. I also put tinfoil down in a glass baking dish cause I wanted to be able to pull the whole thing out so I could cut nice squares for a potluck, this worked, but the ends where I didn't have tinfoil it got a little darker and crisper, which I liked. I'll be making these again for home, but without the tinfoil. Oh and I really liked the white cake mix for these! Thanks so much for the recipe!!!!

Easy Chocolate Mousse

Reviewed: Nov. 3, 2013
It didn't work/taste quite right for me, but I did like the texture. Next time I will try making pudding to the mfgr directions and then add a bit of cool whip. Thanks for the idea!

Pecan Pie V

Reviewed: Oct. 13, 2013
I've had excellent pecan pie with chocolate before, so after reading some reviews where others added a few chocolate chips I decided to try it too. Well this recipe doesn't need the chocolate, in fact i think it detracted it's great on its own. But that's not the reason for only 4 stars (cause that wasn't part of the original recipe). The only reason I didn't give 5 stars is because I really felt it needed an extra cup of chopped pecans. So next time I make this yummy pie I will follow exactly as written, but add 1 more cup of chopped pecans (oh and a pinch of salt).

Chocolate-Filled Crescents

Reviewed: Oct. 13, 2013
I love chocolate, almost as much as my husband, but even he couldn't finish one of these. Thankfully I only did half with chocolate chips and the other half with cinnamon/sugar. The cinnamon/sugar version was great! Maybe a little glaze over the top and you got a quick decent cinnamon roll. The recipe worked just fine for the chocolate, I guess that's just not a flavor combo we cared for. Great idea though!

Parmesan Tomatoes

Reviewed: Jun. 30, 2013
Wow, so simple and quick. These tasted so much better than I was expecting. I left out the mustard, cause that's just my taste preference. Made this as a side dish with grilled sea bass. Even my husband who isn't a fan of anything veggie went back for more of these. I might try some slightly under ripe tomatoes next time and see if they stay a little firmer after baking. Thank you, thank you for sharing this recipe!

Amazing Lemon Scones

Reviewed: Apr. 6, 2013
So good and so easy! The glaze really makes these scones - don't just drizzle it, frost them with it! I think my lemon juice might have been old, so I added about a tsp of lemon extract to the scone mixture as well as the glaze and it was perfect. I myself am not a lemon fan but my husband is and we both enjoyed these. A great brunch or dessert scone.

Mexi-Mac

Reviewed: Jan. 12, 2013
So good! This has become a family favorite and one of my go to dinners when I don't have much time. I usually have all ingredients on hand as well, and its so simple to put together. Left overs are just as good if not better for lunch the next day (I usually end up making a double batch)

Pumpkin Puree

Reviewed: Oct. 28, 2012
This was very helpful! I cut my pumpkin into quarters because it seemed large to me, and it still didn't get all the way done. But what was done I puréed and used in a pumpkin muffin recipe and it worked out great. I'm not sure I can really tell the difference between this and canned. This was a lot of extra work, I think I'll just buy the canned stuff next time so I can get right to the fun part of baking for me, but I'm thankful for this direction and it worked great!

Roasted Pumpkin Seeds

Reviewed: Oct. 28, 2012
I think I used too much butter or something, but these aren't as crisp as I was hoping for. There's a very fine line between just right and burnt. They have a yummy flavor, just not very crunchy. I might try dry roasting them next time.

Pumpkin Spice Cupcakes

Reviewed: Oct. 28, 2012
Just right! Not too much spice, not too much pumpkin. Thanks to all that suggested setting oven to 350 degrees, that was much better. Also, I thought the batter was a little runny, I thought I did something wrong or forgot an ingredient, but they turned out perfect! Thanks for this muffin recipe!

Mocha Chocolate Chip Banana Muffins

Ok, so I wasn't brave enough to make with the coffee, but other than that I followed the recipe exactly as written and these are to die for!! This will be my new go to muffin recipe. This was the most velvety batter I ever worked with! So good, I should have made two batches.

These are the best! A nice flaky and savory biscuit. Reminds me of the biscuits we once had at red lobster, but better! I'll be making these often.

Mom's Best Peanut Brittle

Reviewed: Aug. 26, 2012
Great flavor! I've never made any kind of brittle, but I made this three times yesterday - one with peanuts, one with cashews, and one with almonds. It worked perfectly for all of them, and easy too! The key is to stir constantly once you add the nuts, I found it helpful to clip the candy thermometer to the inside of each pot. I can't wait to make this again and drizzle some melted chocolate chips over the almond brittle!
