Downeast Maine Pumpkin Bread
Oh my. I burned my tongue because I just HAD to have one straight out of the oven. Totally worth it. Followed the recipe, except I did take the suggestions to substitute 1/2 c applesauce and 1/2 c oil (I didn't have vegetable, used canola). I also used 1 c. dark brown sugar and 2 c. sugar. Even with doing this, I don't think it would have changed the taste enough to take off any stars for it. Wowzers, this is yummy!!! Can't wait to try some tomorrow, since I'm reading it's even better second day! Made 12 muffins and 4 mini-loaves.
EDIT: I have made this a number of times... In fact, made it yesterday and, while it was cooling I took my daughter to play rehearsal and dropped her off. When I got home, my hog-dog ate the WHOLE batch.... Made 36 muffins, by the way. My attempts to gorge myself on them was thwarted, and I was so upset!!! Making again as I'm typing this, house smells so yummy! Thank you over and over for the recipe!
