Baked Soy Lemon Chops

I used reduced-sodium soy sauce, & added some sesame seed oil. I marinated the chops for about 5 hours. The pork chops were very tender, & my husband loved them. This is a definite keeper!

Creamy Potato and Leek Soup

Reviewed: Nov. 7, 2003
Excellent easy soup. Like some of the other reviews, I added salt, fresh ground pepper, and cayenne pepper.I also used milk instead of cream, and mashed some of the potatoes. I think I will try adding celery next time. My husband and I loved this soup. Thanks for a great recipe!

Awesome Roast Beef

Reviewed: Nov. 19, 2003
I added a package of Lipton's Spicy Onion soup mix to the broth. It gave the beef and the vegetables a nifty little kick. Great results, really easy to make.

I thought this was an excellent soup. I added a small can of diced tomatoes, & two diced potatoes. The next day the flavour was out of this world! A definite keeper!

Salsa Chicken

Reviewed: Jan. 8, 2004
Excellent recipe. Very fast & easy to make. I used a spicy taco seasoning, medium salsa, & a shredded tex-mex blend of cheese. I put the entire package of seasoning in a baggie, & coated the chicken that way. I also used about two cups of salsa. This is a keeper!

Janine's Best Banana Bread

Reviewed: Jan. 10, 2004
I was a little disappointed in this, given the rave reviews. After an hour, the loaf was a lovely dark colour, but after letting it cool, found the middle uncooked. Next time I would use mini pans. The smell was wonderful, though.

Great Hot Crab Dip

Reviewed: Jan. 24, 2004
This is amazing ! I used a spicy seafood sauce, & extra hot horseradish. Instead if onion, I used diced green onions. My husband loved it. We had it with tortilla chips, which worked really well. Thank you for this great recipe!

Mandarin Orange Chicken

Reviewed: Jan. 25, 2004
I sliced the chicken into strips, I used more green onion than the recipe calls for, & also added some garlic. The sauce is fabulous! My husband is a huge chicken lover, & he thought this was a really great dish. Thanks for sharing!

Honey Baked Chicken II

Reviewed: Jan. 31, 2004
I cut way back on the butter, used a hot/sweet mustard (double the amount called for) added lots of minced garlic, fresh ground pepper, & used boneless chicken thighs. The house smelled wonderful while it was cooking! Served over rice with steamed broccoli, it was a great dinner!

Thai Chicken

Reviewed: Feb. 1, 2004
Absolutely dreadful. I am a huge Thai food fan, & I have never tasted anything like this before. Even cutting back to 1/2 cup of soy, this was far too salty. The sauce was an unappetizing mess. What a waste of chicken.

Excellent soup! I used elbow macaroni instead of rice, added 2 cups of beef broth, & some rosemary. A really hearty soup that had them coming back for more! Thank you for the great recipe!

Pineapple Cranberry Chicken

Reviewed: Feb. 12, 2004
This is a keeper! I seared the breasts first, sprinkled cinnamon directly on the chicken then over the pineapple, & served it with Jasmine rice & steamed green beans. A wonderfully simple yet absolutely delicious recipe.

Ian's Potato-Vegetable Soup

Reviewed: Feb. 17, 2004
Great soup & very easy to make! It cooks up in no time flat, so it's a lovely mid-week no-brainer. I cooked the potatoes, carrots & onions at the same time, then added the celery. I also added alittle crushed rosemary & some minced garlic. Thanks Ian for a really tasty soup!

Needs something, but I'm not quite sure what. Not bad, but it doesn't shout "Make me again" either.

Peachy Pork Chops

Reviewed: Feb. 27, 2004
This was simply delicious. I made a few very minor adjustments. I used about half the amount of brown sugar called for, as some people thought it was too sweet, I added fresh minced ginger to the peach juice, & sprinkled powdered ginger & freshly ground pepper on the chops before browning them. My husband & I loved them. This is sure to become a favourite! Thank you Betty for an excellent recipe!!

Lemon Mustard Chicken

Reviewed: Mar. 15, 2004
I used English mustard for a hotter taste,& marinated the chicken for 2 hours in the lemon/lime/mustard. I sprayed the pan with oil instead of using all that butter. The taste was scrumptious, although I did find the coating alittle soggy. With work, this could become a favourite.

I used freshly squeezed orange juice, mixed alittle cornstarch into the sauce after the chicken was cooked to thicken it up, & served it with Jasmine rice, & steamed veggies. Huge hit! A very easy & extremely tasty recipe. Thank you!

Spicy Garlic Lime Chicken

Reviewed: Jun. 3, 2004
WOW! This was fabulous! I added a little extra cayenne, because we like it spicy, & used about 4 tablespoons of lime, but other than that, left it the same. We really liked this one. Thanks for sharing a great recipe!

Grilled Lemon Herb Pork Chops

Reviewed: Jun. 3, 2004
Added more garlic, & cut back on the salt. It took much longer on my grill, maybe the chops were thicker. As much as they were tasty, I can't say I thought they tasted like steak. A keeper, will try it on chicken next.
