Moussaka

Delicious! I have only made Moussaka once before, but it didn't seem quite right to me, but I found this recipe and thought I'd give it another try. I am very glad that I did. This recipe was amazing! I made the meat portion of the recipe the night before, as others suggested, to save on time. Yes, it was very time consuming, yes it was totally worth the time. I also did as other suggested and added 2 extra eggs (separated and blended in) and I used 2 medium sized eggplants and two potatoes. For the eggplant, I cut it into rounds and set them out with salt, then I broiled them on each side for about 3 minutes. It worked out wonderfully. The Moussaka was a delight for everyone who ate it.

Baklava

I have never made baklava before and I had never tasted baklava before. I wanted to make a Greek style dessert to go along with the Greek style dinner I was making for my family. I came upon this recipe and I gave it a try. It was surprisingly simple and the result was a phenomenal dessert that everyone enjoyed. I followed the recipe, using 1 lb of walnuts and a few pistachios. I cut down a bit on the butter, but other than that it was just perfect. Delicious!

Chicken with Quinoa and Veggies

Made this for diner tonight, it was delicious! Didn't know what garlic scapes were so just chopped up some garlic cloves. Also didn't have any lime juice, so omitted that. Used some dried basil leaves, crushed up and added fresh pepper to the chicken as it cooked then more fresh ground pepper to the zucchini and tomatoes as they cooked. Overall, this was a fantastic recipe that I and my boyfriend enjoyed thoroughly. Will definitelt be making again and again, Thanks!

Banana Muffins with a Crunch

I made these tonight... used the 1 c whole wheat/2 c white flour as others mentioned, also used only 1 c purecane sugar and it was perfect. I completely forgot to add the granola, though I had planned on Oats instead (forgot those too) I only used 2 mashed ripe bananas since that's what I had on hand, and I added some Butterscotch chips just because I love them and with that they were delicious. So this recipe can work with variations. I may try the actual recipe, but what I baked up was yummy!

Quinoa and Black Beans

This was the first time I ever cooked quinoa. I like how simple and tasty this recipe is. I also chopped up some red pepper as others had suggested and cooked it with the garlic and onions. With the seasonings I added some chilli powder and extra cumin and cayenne. I used canned kernel corn and added it at the end, along with some green onion. I only used one can of black beans too. I didn't add any cilantro though. I love it but others don't like it at all, so I didn't try it. It was enjoyed by all. I especially like the subtle nutty flavour of the quinoa. I am going to be cooking with it a lot more now. Thanks for the recipe :)

Baked Spaghetti Squash with Beef and Veggies

First recipe I have ever tried with spaghetti squash, and it was delicious! I used the microwave suggestion of another reviewer to save time, worked perfectly... microwaved the cut squash in a bit of water pulp side down for 10 min. Then follewd the recipe as written. I will definitely be making this again!

Lime-Curry Tofu Stir-fry

Amazing! This is easily one of my new favs! I fried the tofu up with garlic, ginger and a dash of soya sauce. Also added garlic to the recipe, and did sub in fish sauce which I think made a huge difference... My boyfriend does not like seafood, but doesn't even notice a fish taste at all. The end result was delicious, and I have a feeling I am going to be making this a lot more! Thank-you for the wonderful recipe!

Zucchini Pie

The recipe was a good starting off point... I went with some of the additions that other suggested: a few cloves of garlic, lots of fresh veggies, like carrots and red peppers. I also used fresh basil from the garden and with these additions it turned out fabulous. Will definitely be making this again with variations on the veggies, whatever I have on hand.

Zucchini Pasta II

MmmMmm delicious! So simple and delicious. I just used some fresh red pepper I had and it was yummy. I did use more cream cheese as others had suggested. I didn't have parmesan so I omitted it, however I think it would have made this dish even more tasty. Fresh basil is an excellent addition too. Thanks for the recipe.

Zucchini Brownies

WOW these brownies are amazing! The mix seemed a little dry and crumbly, but I stuck it in the oven as is and it turned out wonderfully. Changes I made: I added 1/2 c. of chocolate chips and I used melted butter instead of vegetable oil. Instead of flouring the pan, I use cocoa powder. I didn't even put the frosting on top and they were still great! So moist and delicious! Love this recipe, thanks!

Salsa Chicken

Super easy and yummy! I just sprinkled the taco seasoning on the top of the chicken adn I found that was sufficient. The seasoning I has was labeled "hot" and I used Pace Picante "hot" salsa and it was nice an dspicy. My boyfriend loves spicy so it went over well. Served it with the black beans and rice recipe from this site. Nice flavourful and colourful meal. Thanks!

Black Beans and Rice

I tried this recipe once a few years ago, today i woke up thinking about it for some reason. Maybe because it was so yummy! As some others suggested I added a few things like tomatoes and peppers, but really, it is an excellent recipe, nice and simple, a great side dish or lunch. The first time I made it I actually just used left-over rice and added all the other ingredients to it and it was great.

Gourmet Mushroom Risotto

My first attempt at risotto and, as far as I know, turned out fantastic. My boyfriend really enjoyed it and is waiting for me to make it again. I used all kinds of fancy mushrooms, but I am sure it would have been satisfying with just regular white mushrooms. Gotta pay attention to what your doing, stirring constantly and you can't go wrong. Nice recipe, thanks!

Delicious Ham and Potato Soup

was drawn to this recipe based on the ratings and reviews. Bang on! It was a great soup! I had some extra black forrest ham that I wanted to use, already did sandwiches two days in a row so I wanted something different. I sliced up the ham and tossed it in, worked well. Such a nice easy soup to make and simply delicious I followed the recipe as is, other than using sliced ham cut up into bits! I'll be making this again, definitely!

Downeast Maine Pumpkin Bread

ugh, I don't know what I did wrong but this was not too good at all. It smelled nice, but it was too moist and took forever to bake. I was so looking forward to this bread. Now, I am just going to find another recipe.

Maple Apple Crisp

I love maple syrup and this recipe is so simple and delicious. Made extra topping. Very sweet, however the sweetness seemed to be less prevalent the following day which made it even more fantastic! I'm sure this would be perfect with vanilla ice cream.
