Swan's Summer Soup

I prefer to squish tomatoes instead of using the juice. It tastes fresher and there's something satisfying about squishing tomatoes in a colander. I use about 8 largeish tomatoes to make 3 or for modest servings.

Stuffed Bell Peppers

I used Morningstar Farms Grillers Burger-Style Recipe Crumbles instead of textured veg. protein for a more authentic taste. This is a great recipe for vegetarian stuffed peppers, especially as we head into the colder months.

Greek Potato Stew

Very tasty way to use olives! Incredibly simple. I peeled and microwaved my potatoes [cut in half] for about 10 minutes and didn't have any problems with them sticking to the pan. Careful not to use salty olives...

Grilled Salmon with Habanero-Lime Butter

I don't own a grill, so I just fried salmon steaks in a pre-heated pan; about 4 -5 minutes on each side. I also substituted some other pepper for the habenero because I couldn't find it in my market, and I really noticed a strong lack of spiciness. But even with these substitutions, the salmon was *delicious* and very rich.

Vegetable and Feta Latkes

Great variation on the often dense and greasy potato latkes! The feta adds a lot of taste without being overpowering. The number of veggies makes me feel good about eating fried food too!

Easy One Skillet Stroganoff

This was a good, simple, hearty dish (but nothing to write home about). I substituted 2 garlic cloves for the powder and 1 sliced portobello for the canned 'shrooms (all of which I sauteed with the onions). I added a can of cream of mushroom and used water instead of broth. Because the fake beef I used was pretty gross (Lightlife Gimme Lean ground beef in a tube) and I didn't have Worcestershire sauce, I added some paprika, a dash of cayenne, a pinch of cloves, and a dash of G. Washington's Rich Brown Seasoning and Broth powder. As another revier mentioned, the whole thing looked/ smelled pretty unappetizing up to the very end. When I discovered that my sour cream was improperly packaged and moldy (gross, right?), I substituted the same amount of plain yogurt. It ended up being pretty nice with a side of sauerkraut (which nicely offset the sweetness of the stroganoff) and a green salad.

Spinach Muenster Quiche

Tasty, but a little salty or something. At any rate, I was aware that I was eating a huge hunk of cheese when I bit into it. Best not to think about the fat content. (I used fat free cream cheese and I think the quiche was better for it.) Filling, however. I made it for a dinner party with limited ingredients on hand and it made a great vegetarian protein dish without seeming too meatless :)
