Asian Salad

Reviewed: Oct. 16, 2003
My husband and I loved it! I made up the whole recipe for the dressing, but since it was just the two of us, I halved the salad ingredients and used half the dressing. Then we had it again two days later. The second time we had it I used raw cashews. It was great that way too. I even used some of the dressing on a frozen oriental rice, veggie and bean mixture and liked it.

Scalloped Cabbage

Reviewed: Dec. 16, 2007
Great side dish! As others stated, I changed it a little. I used yellow snack crackers and since I didn't have milk, I use half and half. I also put a handful of cheeder cheese in the mixture and then topped it off with the crackers, cheese and bacon pieces.

Tuscan Soup

Reviewed: Jan. 10, 2006
Just had this recipe tonight. I give it 5 stars because it was quick and easy and tasted great. It reminded me of the soup you get at Olive Garden. I only had regular Italian sausage, so I spiced it up with some red pepper flakes while I was browning the sausage.

Texas Coleslaw

Reviewed: Jan. 2, 2006
I made this tonight with my special steaks for my husband and I. He really liked the slaw and said it was a good side dish with the steaks and rated it 5*s. Will definitely make it again!!! I did make one change by adding 1 TBS of white wine vinegar.

Texas Sheet Cake I

Reviewed: Aug. 21, 2005
I just made this for a picnic and it was so easy and quick to make. Love the fudge icing. I did make a few changes- I added 1 tsp. of cinnamon and 1 tsp. vanilla to the batter. We like pecans, so I used those instead of walnuts.

Fresh Cherry Cobbler

Reviewed: Jun. 14, 2005
We have a cherry tree in our back yard and I was always looking for a quick and easy recipe to use the cherries. I found it! My husband and I made this last night and it was great. I took the suggestions to add some cinnamon, nutmeg and ginger to the batter. We both rated it 5 stars.

Broccoli-Cauliflower Salad

Reviewed: Apr. 24, 2005
Great salad recipe!!! Hubby and friends loved it. It was even better the next day. I did use Splenda for half of sugar and next time will probably use only Splenda to cut down on the carbs.

Baked Beans, Texas Ranger

Reviewed: Apr. 11, 2005
I just made this for company and all commented on how good it was. I omitted the cayenne pepper and used hot rolled sausage and it gave it a nice little kick. Will definetly make it again.

My husband loves chili rellenos, so he really liked this recipe. It had a very similar taste, without all the work of the real thing.

Uncooked Banana Pudding

Reviewed: Mar. 7, 2005
This recipe was so easy and had a really rich, creamy taste. One suggestion if you like your cookies softer, make it a day ahead because they softened up and it was even better.

Awesome and Easy Creamy Corn Casserole

Reviewed: Mar. 7, 2005
We had this the other night for a family dinner and it was very good as a side dish. It had just the right consistency to be called a corn casserole (as opposed to some of the other comments) My husband ate about half the pan.

The combination of spinach and mushrooms with the feta and cheedar was very good. Everyone at our company breakfast was impressed. I will definitely make this again.

Aussie Omelet

My husband and I both gave this a 5*. The slight hint of curry was great. I thought the shrimp would be overpowering, but it was wonderful.

Mexican Chicken Corn Chowder

Reviewed: Dec. 25, 2003
Great tasting soup! I had to substitute a few things for what I had on hand: 1 can evaporated milk + 1 c. whipping cream; 1/2 c. med salsa for tomato; 1 can of chicken broth + 1 chicken bouillon cube. I also thickened it with 2 T. cornstarch in a little water. I served it topped with crushed tortilla chips and a dab of sour cream.

B.L.T. Salad with Basil Mayo Dressing

Reviewed: Mar. 5, 2005
I have made this recipe several times for company and it has always been very good and recieved alot of complements. One note, I use sour dough bread last time I made it and the croutons were on the doughy side, a drier type of bread would probably be better. Also sometimes it's hard to find fresh basil locally, so I used freeze dried basil and it was just as good.

Chicken I Hate You!

Reviewed: Jan. 27, 2009
I rated this 4 stars for the simplicity. It was good. Hubby liked it even though he doesn't really like asparagus. I will try it again but substitute brocoli for asparagus and add some bacon, just a personal preference.
