Banana Pancakes I

Great recipe after a bit of tweaking. I reduced the banana to only one large over-ripe banana for that quantity of flour and used a potato masher to ensure it was fully mashed. I sifted the dry ingredients together and added a couple of dashes of ground cinnamon, ground nutmeg. I added a splash of vanilla to the wet ingredients. Like one of the reviewers said, the pancakes turn out better if you cook them at a lower temperature to make sure the inner part of the pancake gets fully cooked (I do this with all fruit pancakes as well as with chocolate chip pancakes). Even though I reduced the amount of banana, they still had a strong banana taste.

Chai Tea Mix

I really like this mix and it was easy to put together. I reduced the sugar to 2c and it is still a little sweet for my taste, but probably the perfect amount for giving as a gift since many people seem to like sweet tea. I ran out of ground cloves and didn't have ground cardamon, so I used my coffee grinder to grind whole cloves and cardamon seeds instead. It made the mix smell fantastic, but did leave a little more sediment in the cup than pre-ground spices would. I am going to try spicing it up even further with allspice and white pepper (maybe nutmeg... not a traditional chai spice, but then again neither is allspice).

Spiced Slow Cooker Applesauce

Very good recipe! My husband and I both love it. I will make it again. I really liked the spice. I used McIntosh apples that were a bit tart so the recommended amount of sugar was fine. You could easily reduce the amount of sugar in the recipe if you are concerned about sugar intake. I left the peels on the apples and cut them into 1/2" or so cubes (I used an apple corer which sped up the prep time).

Easy Peanut Butter Bars

These were a huge hit with my family. As they were baking in the oven, the wonderful smell caused them to come into the kitchen to ask what I was making. I followed the recipe exactly and they turned out great. I would only suggest a change to the instructions of the recipe. As with any cookie or bar recipe, I would suggest creaming the butter, peanut butter and sugar first. Then mix in the egg and vanilla. Mix in the dry ingredients, then finally stir in the chocolate chips. SO easy and so delicious!

Green Beans with Cherry Tomatoes

This is delicious! I will definitely make it again soon. I used patio tomatoes from our garden instead of cherry tomatoes. Other than that, I followed the recipe exactly. We both had second helpings of this.

Todd's Famous Blueberry Pancakes

Very good recipe. I did add one teaspoon of vanilla (a must for me)and I used fresh blueberries. Recipe doubles well. I don't understand some of the negative reviews, but think these might be "user error"? One review mentions all the baking soda making the pancakes taste metallic.... but the recipe doesn't call for baking soda, it calls for baking powder. The other complaint is the batter is very thick; however, a thick batter is needed in order to suspend the berries in the batter. If the batter were thinner, all the berries would sink to the bottom. These pancakes are not very sweet, so if you prefer sweet pancakes, then add more sugar. I think this recipe is a great base for people to tweak based on their own personal tastes. In addition to adding vanilla, next time I will try a touch of cinnamon and nutmeg.

Pumpkin Pancakes

VERY GOOD! Good pumpkin taste, not overly sweet. I used white sugar instead of brown because it was what I had on hand. Still tasted fantastic. Also added a dash of nutmeg and some ground flax seed to make it a lttle healthier. Will definitely make this again!
