Lasagna Spinach Roll-Ups

Delicious! I made sure noodles were cold and so was filling. No trouble rolling. (I did allow for some noodles to break and be discarded.) Substituted ricotta for the cottage cheese and added hot italian sausage to the tomato mixture. Heated and served extra sauce (Classico red pepper) along with fresh grated parmesan. It was a definite success for our party!

Zucchini Saute

I followed advice of others and substituted fresh basil for the Italian seasoning and added crushed red pepper, to taste. It was a great addition to the Lasagne Spinach Roll-Ups and Mardi's Broccoli Salad!

Zippy Egg Casserole

This was delicious! My only caution is that if you prepare at a high altitude (I was at Tahoe), increase temp by 25 degrees and time by 15 min or more. Once I figured that out, it was a winner. I was also tempted to add the peppers & onions that others have, but resisted since this was for a diverse crowd which included some pickier eaters. (Sounds great to me, though!)

Spinach Pasta Salad

This salad is FABULOUS! I've made 3 times this summer to rave reviews AND sent extra home with guests. Many requests for recipe. I've incorporated others' suggestions for artichoke hearts, red or orange bell pepper, and halved grape tomatoes. Yum!!

Monterey Jack Salsa

This was a HIT! I wonder if others who made it may've missed the "Zesty Italian" salad dressing? I believe that it's intended to mean Good Seasons (packet mix) Zesty Italian... I used it and made with red vinegar. Also, dropped the MSG, too. Yum!
