Easy Broccoli and Ham Quiche
For a true 9" pie, this was too many ingredients. I cut the cheese and ham to 1 cup instead of 1 1/2 cups, and then the eggs fit in the pie shell. As for the cheese, I put a layer of cheese on the bottom of the pie shell, then added some to the broccoli/ham mixture, and sprinkled some on top. This worked! It also needs to rest for 10 minutes before serving to set up properly. My family loved it.

Jambalaya
Will definitely make this again. However, my first attempt came out WAY to salty. I would recommend cutting back or eliminating the salt until you've tasted your final result - then add to taste. The brand of Cajun you use makes a big difference.

Southern Style Thanksgiving Green Beans
This is a really good recipe. I've also found others that I liked, so I've blended them together a little. I use 2# of frozen beans, add a couple tsp of sugar, 6 slices of crisp thick bacon (I can't easily find ham hock in MN) w/grease, 1/3 onion, plus the garlic, vinegar, salt & pepper, and cook it in a crock pot on low for 6-8 hrs in 2-1/2 cups of chicken stock. Other than the ham hock, these are as close to the beans I loved when I lived in GA that I've been able to make.
