To Die For Blueberry Muffins

I used blueberry pie filling about 6 tbsp. I know it was a (no-no) but it's all I had and I really wanted blueberry. I didn't stir it, I just moved it around a little bit with a knife.I used shortening & flour in the muffin tin so they wouldn't stick.Also I reduced the sugar to 2/3 because I used pie filling. Just wanted to let you know that it worked and the muffins were awesome. It helps to run a butter knife around the edges and let them cool for a few minutes and they come out just fine...yummy

Vegan Bean Burgers

Loved it, while I did change a few things, to my taste, which is the nice thing about veggie burgers. I used mashed black beans. 1/2 oats, 1/2 chopped green pepper, 2 chopped mushrooms, no water, 1/4 steak sauce, 3 Tbsp flour, 1 tsp cornstarch. no carrots, no celery.Garlic powder, onion powder, 1 tsp paprika and 1ts steak seasoning.I've only been not eating meat for a year out of my 50 years so I needed a good imposter for the real thing.

Believe it or not, I substituted baking powder & vinegar for yeast. This was the best bread Ive ever made. My bread rose in the oven perfectly. It was simply amazing. The bread cut real nice and the taste of this bread is out of this world!

Deep Fried Mushrooms

Great recipe, we loved the mushrooms, served with my homemade Garlic/Ranch dressing.I added baking powder to my flour plus 1/2 cup of milk with lemon juice (like buttermilk) 1/2 water. Paprika ! thumbs up!

Old-Fashioned Chocolate Fudge

Since failing with a different recipe, I was on a mission to make fudge.I buttered my glass pan and went to work at 5am. It's now 755am and my perfect fudge is cooling. I used 3 cups of sugar, 1 cup milk, 2/3 cup cocoa. 6 Tb salted butter, 1 1/2 Tb vanilla and a 1/2 cup of peanut butter. Cooked for 20 mins on medium. A little sweet but good. Next time I will wake up & have coffee first & use the amount of sugar called for.

Banana Cream Pie I

This was my first cream pie and I should of read the reviews first because the pudding did not set up well. I used the flour and maybe did'nt cook it long enough or at a high enough temp.However I made a home pie crust and homemade whipped and the taste of the pie was very good. A little practice with the pudding and I will try this again

Mom's Best Macaroni Salad

I used unsweetened evaporated milk 1/4 of a cup and 1/2 tsp of sugar, because I know my own taste.Vinegar also was reduced to a 1tsp.Sometimes you have to use your head when following a new recipe.I kept the bell pepper green,red onion,celery,I also added cup of shredded cheddar cheese.Very good the way I made it.

Chocolate Pinwheels

I'm sitting here eating this cookie while I type.I used Hersey's cocoa powder for the unsweetened chocolate.The measurements are on the can. It just might be that semi-sweetened would be better. Here's the amounts for equal to 1 ounce of semi-sweet. 1 Tablespoon cocoa powder, 2 tsp shortening + 3 1/2 tsps sugar.I didn't bother with wax paper or a rolling pin, I just flattened the dough on a floured board,brushed on the milk and add the layer and rolled it up.On the down side no one even mentioned that 5 minutes in a oven is never enough time to bake a cookie, mine stayed in for 9-12 minutes.Also I added 1 tsp lemon juice & 1/2 tsp almond flavor, so mine tasted ok.
